  • 3 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp sugar
  • 2 Tbsp gochujang (Korean chili paste)
  • Pinch of black pepper

Rinse the cleaned whole chicken under cold water to remove any residual blood. This step is crucial for a clean and non-gamey flavor.

Prepare the vegetables for the dakdoritang. Chop the potatoes, carrot, onion, and green onion into bite-sized pieces. (Tip: Adding potatoes makes the stew richer and more filling!)

Place the chicken in a pot and cover it with water. Bring to a rolling boil over high heat to remove impurities. Skim off any foam that rises to the surface, then discard the boiling water.

Add fresh water to cover the chicken again and bring it to a simmer over medium heat.

Once the water starts boiling, add the 3 tablespoons of sugar. Sugar helps tenderize the chicken and balance the flavors.
