Spicy Sweet Cheese Pork Ribs

This dish was specially created for my sons who absolutely love meat dishes. I’ve combined all my culinary knowledge to create a dish that’s sure to be a hit with younger crowds and perfect for entertaining guests. I’m excited to share this recipe that I believe is absolutely perfect for hosting friends.

Main Ingredients

  • Pork back ribs, 1 pack (approx. 600g-1kg)

Ingredients for Boiling Ribs

  • Cooking wine or Soju, 1/2 cup
  • Green onion, 1 stalk (cut into large pieces)
  • Onion, 1/2 (medium size, cut into large pieces)
  • Doenjang (soybean paste), 1 tsp
  • Saeujeot (fermented shrimp), 1 tsp
  • Instant coffee powder, 1/2 tsp
  • Water (enough to cover the ribs)

Spicy Sweet Sauce

  • Gochugaru (red pepper flakes), 2 Tbsp
  • Soy sauce, 3 Tbsp
  • Soju or rice wine, 2 Tbsp
  • Plum extract or corn syrup, 1 Tbsp
  • Black pepper, a pinch (freshly ground)
  • Minced garlic, 1 Tbsp
  • Gochujang (red pepper paste), 1 Tbsp
  • Store-bought spicy rib sauce (optional, for enhanced flavor), 1 Tbsp
  • Mozzarella or pizza cheese (generous amount, to taste)

Cooking Instructions

Step 1

First, it’s crucial to remove the blood from the pork ribs. Soak the ribs in cold water for about 1 hour to drain the blood. It’s even better if you change the water once or twice during this time for thorough blood removal.

After draining the blood, briefly blanch the ribs in boiling water. This initial boiling helps to remove impurities and any gamey odor from the ribs.

Rinse the blanched ribs thoroughly under cold running water. It’s essential to meticulously clean out any remaining blood or impurities stuck between the bones to prevent any unpleasant smell in the final dish, ensuring a clean and delicious taste.

Place the cleaned ribs in a pot along with the ingredients for boiling (cooking wine/soju 1/2 cup, green onion 1 stalk, onion 1/2, doenjang 1 tsp, saeujeot 1 tsp, coffee powder 1/2 tsp) and enough water to completely cover the ribs. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 1 hour until the ribs are tender. This cooking method ensures tender ribs and effectively eliminates any unwanted odors.

While the ribs are cooking, let’s prepare the delicious spicy and sweet sauce. In a bowl, combine gochugaru (red pepper flakes) 2 Tbsp, soy sauce 3 Tbsp, soju/rice wine 2 Tbsp, plum extract 1 Tbsp, a pinch of black pepper, minced garlic 1 Tbsp, gochujang 1 Tbsp, and optionally, 1 Tbsp of store-bought spicy rib sauce. Mix all ingredients thoroughly until well combined.

Remove the boiled ribs from the pot and discard the aromatics (green onion, onion). Pour the prepared spicy-sweet sauce over the ribs. Stir occasionally to prevent sticking and allow the sauce to coat the ribs evenly. Simmer gently until the sauce thickens slightly and coats the ribs beautifully. Cooking over low heat allows the flavors to meld deeply, enhancing the taste.

Finally, arrange the cooked ribs attractively on a serving plate. If you’re concerned about the presentation, you can assemble the dish directly on the plate you’ll be serving from. Top generously with mozzarella or pizza cheese according to your preference. Microwave for about 2 minutes, or until the cheese is melted and bubbly.
