Step 1
Prepare the dried squid strips. If they are very dry and hard, you can soak them in water or cooking wine for about 10 minutes until softened. Then, squeeze out the excess water thoroughly. This will result in a chewier texture. Be careful not to soak them for too long, as they might become too soft.

In a pan, combine all the seasoning ingredients: gochujang, gochugaru, minced garlic, soy sauce, corn syrup, and water. Bring to a boil over medium heat. Once the sauce starts boiling, reduce the heat to low and simmer for about 5 minutes, allowing the flavors to deepen. Stir occasionally to prevent the sauce from burning.

Now it’s time to stir-fry the squid strips. (If the dried squid strips you purchased are not very dry and might have a fishy smell) Lightly grease another pan with cooking oil. Add the prepared dried squid strips and stir-fry over low heat for about 1-2 minutes. This step helps to eliminate any unpleasant odors and adds a more savory flavor to the squid. This is an optional step, but it’s highly recommended.
Step 4
Drizzle the mayonnaise over the stir-fried squid strips as desired. Mayonnaise will make the squid strips softer and slightly mellow the spiciness of the gochujang, balancing the overall flavor.

Now, mix everything well. Gently toss or use a spatula to ensure the mayonnaise coats the squid strips evenly. This helps the ingredients meld together for a more delicious texture.

Finally, pour the delicious sauce you made in step 2 generously over the squid strips. Mix well again to ensure the sauce coats the squid strips evenly. Continue to stir-fry over low heat for another 2-3 minutes, until the sauce is fully absorbed and the strips are glossy. Turn off the heat.
