Cooking Instructions
Step 1
Prepare 9.5 boiled eggs. (You can use the remaining half egg for another dish.) Since boiled eggs can lose freshness over time, transforming them into a salad is a wonderful way to enjoy them while they’re still good.
Step 2
Instead of using a knife, scissors are a better tool for cutting boiled eggs to prevent the yolk from crumbling and ensure a cleaner cut. Cut the eggs into bite-sized pieces. Now, add the wasabi paste to bring a spicy flavor. Adjust the amount of wasabi according to your preference.
Step 3
Add a generous amount of mayonnaise for a creamy texture. Be sure to add enough to blend well with the eggs.
Step 4
Now, season the salad. Add freshly ground black pepper, garlic herb salt, and honey for sweetness. Mix everything thoroughly until well combined. If you desire a slightly tangier flavor, a splash of lemon juice can be added. For an extra spicy kick, you can add more wasabi.
Step 5
Once everything is well mixed, chill the salad in the refrigerator for a delicious ‘Wasabi Egg Mayo Salad’. For variations, you can add mashed boiled potatoes or finely diced cucumbers for added texture. If you plan to serve it immediately, adding finely chopped onions will provide a pleasant crunch and enhanced flavor.
Step 6
Let’s make the Tteokkochi sauce. In a bowl, combine gochujang, ketchup, and honey (or corn syrup). Mix them well. This basic sauce is made with these three key ingredients.
Step 7
The sauce ingredients are now mixed. If you have time, letting the sauce rest in the refrigerator for about a day will allow the flavors to meld and deepen, resulting in an even more delicious sauce. However, it tastes great even when used immediately.
Step 8
Prepare a pan for frying the rice cakes. Add a generous amount of oil to the pan. Place the soft rice cakes one by one, ensuring they don’t stick together, and fry them until golden brown and slightly crispy.
Step 9
The soft rice cakes are frying to a perfect golden brown. You can hear them sizzling as they cook beautifully! These fried rice cakes are delicious even on their own. Try dipping them lightly in soy sauce or wrapping them in seasoned seaweed for an extra treat.
Step 10
Add the freshly fried rice cakes directly into the prepared Tteokkochi sauce. Gently toss them to coat evenly, being careful not to break the soft rice cakes.
Step 11
Here are the skewer-less Tteokkochi, coated well in the delicious sauce. If corn syrup was used instead of honey, they might have had a glossier finish! They are perfectly ready to eat without skewers.
Step 12
Arrange the finished Tteokkochi attractively on a serving plate. Sprinkle with toasted sesame seeds for a final touch. Enjoy your delicious skewer-less Tteokkochi!
Step 13
Serve the prepared Egg Wasabi Mayo Salad in a small dish. You can sprinkle a little black pepper on top if you like, or finish it with a dash of parsley flakes, as I did. Your zesty and creamy Egg Wasabi Mayo Salad is ready!
Step 14
The spicy and sweet Tteokkochi is beautifully complemented by the creamy and zesty Egg Wasabi Mayo Salad, creating a fantastic flavor combination. The soft yet chewy texture of the rice cakes is also delightful. It’s a perfect and satisfying snack or light meal when you’re feeling peckish. Enjoy your delicious creation!
