Gimbap Ingredients

  • 5 Chicken Tenders (thick cut)
  • 5 Garlic Scapes (fresh and crisp)
  • 10 Pickled Radish Strips (Danmuji)
  • 10 Braised Burdock Root Strips (Ueong)
  • 1/2 Carrot, julienned
  • 1 Eomuk Maeran (Korean fish cake, sliced lengthwise and pan-fried)
  • 5 Eggs, made into thick omelets and sliced
  • 5 Imitation Crab Sticks, halved
  • 4 cups Cooked Rice
  • 1 Tbsp Salt (for rice seasoning)
  • 1 Tbsp Sesame Oil (for rice seasoning)
  • 1 Tbsp Toasted Sesame Seeds (for rice seasoning and garnish)
  • 1 cup Seasoned Laver Flakes (for mixing into rice)
  • 10 Sheets of Gimbap Seaweed

Cooking Instructions

Prepare the chicken tenders. Since they are quite thick, bake them in an air fryer until golden brown. Once cooked, slice each tender lengthwise into 2 or 3 pieces, suitable for rolling into gimbap. Your special chicken filling is now ready.

Prepare the other fillings. Slice the Eomuk Maeran lengthwise and pan-fry until golden. Similarly, cut the thick egg omelets into long strips. Halve the imitation crab sticks. Trim the tough ends off the garlic scapes and cut them in half to maintain their crispness. Ensure your julienned carrots and braised burdock root are also ready.

Season the cooked rice. Mix in 1 tablespoon of salt, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds. For an extra layer of flavor and texture, add 1 cup of crumbled seasoned laver (jaban kim) and mix well. Taste the rice; it should be perfectly seasoned. Let the seasoned rice cool slightly before rolling.

Place a sheet of gimbap seaweed on a bamboo mat. Spread a thin, even layer of seasoned rice over the seaweed, leaving a small margin at the top. Arrange the prepared fillings – chicken tenders, garlic scapes, Eomuk Maeran, egg omelet, imitation crab sticks, carrots, pickled radish, and burdock root – in a line on top of the rice. Carefully roll the gimbap tightly using the bamboo mat, ensuring the fillings stay in place.
