  • 1/2 onion (approx. 50g)
  • 1 tsp minced garlic
  • Pinch of salt
  • Pinch of black pepper
  • 3.5 Tbsp breadcrumbs
  • 2 Tbsp all-purpose flour

  • 1/2 cup cooking oil (for frying)

  • 2 Tbsp ketchup
  • 1.5 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp cooking wine (mirin)
  • 5 Tbsp water
  • 2.5 Tbsp corn syrup
  • 1 Tbsp sugar
  • 2 Tbsp chopped onion

Cooking Instructions

Step 1

Wash the chicken breasts and cut them into bite-sized pieces. Place them in a blender or food processor. It’s important to blend them as finely as possible for a smooth texture.

Step 2

Once the chicken is partially blended, add the finely minced onion, minced garlic, salt, and pepper. Blend again until everything is smooth and well combined. This step enhances the flavor of the chicken mixture.

Step 3

Next, add the breadcrumbs to the mixture and blend briefly. The breadcrumbs will help bind the mixture, making it easier to form into balls. Ensure the breadcrumbs are evenly incorporated.

Step 4

Take portions of the blended chicken mixture and roll them into small, bite-sized balls with your hands. Aim for a uniform size so they cook evenly.

Step 5

While the balls are being formed, prepare the sauce. In a small pot or pan, combine the ketchup, gochujang, cooking wine, water, corn syrup, sugar, and chopped onion. Stir well and bring to a simmer over medium-low heat. Cook, stirring occasionally, until the sauce thickens slightly and the onions become translucent. This should take about 3-5 minutes.
