Main Tteokkochi Ingredients
  • 2 cups Tteokbokki tteok (rice cakes for tteokbokki, approx. 300g)
  • Cooking oil (sufficient amount for frying)

Spicy & Sweet Chili Sauce
  • 2 Tbsp Ketchup
  • 4 Tbsp Store-bought Chili Sauce (adjust to your spice preference)
  • 1/2 Tbsp Soy Sauce
  • 1 Tbsp Oligodang (corn syrup, adjust sweetness to your preference)

Cooking Instructions

Step 1

First, rinse the tteokbokki tteok thoroughly in cold water to remove any starchy coating. This prevents the rice cakes from sticking together and helps achieve a chewier texture for the tteokkochi. After rinsing, drain the tteok completely in a colander. It’s crucial to remove excess water as it can cause oil to splatter.

Step 2

Pour a generous amount of cooking oil into a frying pan. You want enough oil to almost cover the rice cakes. Once the oil is moderately hot, add the drained tteokbokki tteok. Stir-fry them over high heat, turning frequently, until they are golden brown and crispy. The key is to fry them until the outside is crispy and the inside is still soft and chewy. They are perfectly fried when they puff up and the exterior becomes slightly chewy.

Step 3

While the tteok is frying, let’s make the sauce. In a small bowl, combine 2 Tbsp ketchup, 4 Tbsp store-bought chili sauce, 1/2 Tbsp soy sauce, and 1 Tbsp oligodang. Stir well with a spoon until all ingredients are fully mixed. The tangy ketchup, spicy chili sauce, savory soy sauce, and sweet oligodang will create a perfectly balanced chili sauce for your tteokkochi. If you prefer it spicier, feel free to increase the chili sauce or add a little gochujang (Korean chili paste).

Step 4

Once the tteok is crispy, gently pat away any excess oil with a paper towel. Then, thread 4-5 rice cakes onto each skewer. Skewering the tteok makes it easier to coat with sauce and to eat. Brush the skewered tteok generously with the prepared chili sauce. Make sure to coat all sides of the rice cakes evenly with the sauce.
