Tofu Preparation- 1 block firm tofu
- A pinch of cornstarch or potato starch for frying
Spicy & Sweet Chili Sauce- 4 Tbsp chili sauce
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 2 Tbsp mirin (or cooking sake)
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp plum extract
- 1 Tbsp cooking oil (for the sauce)
- 1 Tbsp minced garlic
- 4 Tbsp chili sauce
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 2 Tbsp mirin (or cooking sake)
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp plum extract
- 1 Tbsp cooking oil (for the sauce)
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
First, cut the tofu into bite-sized cubes or sticks. To achieve a crispy texture, it’s crucial to remove excess moisture. Pat the tofu dry thoroughly with paper towels, pressing gently. You can lightly season the tofu with salt and pepper at this stage to enhance its flavor.
Step 2
Evenly coat the dried tofu pieces with cornstarch or potato starch. A thin, even coating will ensure a crispy exterior when fried. Gently roll the tofu pieces to make sure the starch adheres well.
Step 3
Now, let’s make the delicious chili sauce! In a small bowl, combine 4 Tbsp chili sauce, 1 Tbsp gochujang, 1 Tbsp soy sauce, 2 Tbsp mirin, 1 Tbsp oligosaccharide, 1 Tbsp plum extract, 1 Tbsp cooking oil, and 1 Tbsp minced garlic. Whisk everything together until well combined and smooth, ensuring there are no lumps.
Step 4
Heat a generous amount of cooking oil in a deep pan over low heat. Be careful not to let the oil get too hot, as the tofu can burn quickly. Carefully place the starch-coated tofu pieces into the oil. Gently swirl the pan or use tongs to turn the tofu pieces, allowing them to fry until golden brown and crispy on all sides. Stir occasionally to prevent sticking.
Step 5
Once the tofu is golden and crispy, carefully remove it from the oil, draining any excess. Add the fried tofu to the prepared chili sauce in the pan. Stir and toss the tofu with the sauce over low heat for about 1-2 minutes, allowing the sauce to thicken and coat the tofu evenly. Once the sauce has thickened and clings to the tofu, turn off the heat. Sprinkle with sesame seeds for an extra touch of flavor and visual appeal!
