Main Ingredients- 1 bag bean sprouts (approx. 300-400g)
- 1 handful green onions or white parts of scallions, finely chopped
- 1/2 red chili pepper or Cheongyang chili pepper, thinly sliced or chopped (optional)

Let’s get started making a delicious, spicy, and sweet crispy bean sprout salad! With this recipe, anyone can easily make a fantastic bean sprout salad without fail. It’s perfect as a simple homemade side dish or for packing into lunchboxes!
Step 2
First, wash the bean sprouts thoroughly under running water. Place the washed bean sprouts into a pot. Add just enough water to barely cover the bean sprouts (be careful not to add too much water, or they might become mushy and lose flavor!). Cover the pot and bring to a boil over high heat. Once boiling, reduce the heat to medium and cook for an additional 6 minutes. It’s important not to overcook them, as they can become soft. After 6 minutes, turn off the heat and let the sprouts steep, covered, for about 4 minutes. This steaming process will ensure the bean sprouts remain perfectly crisp.
Step 3
Immediately after steaming, rinse the cooked bean sprouts in cold water to stop the cooking process and cool them down. Drain them thoroughly in a colander, ensuring all excess water is removed. Transfer the well-drained bean sprouts to a mixing bowl. Add all the seasoning ingredients: 1 tablespoon of gochugaru, 1/2 teaspoon of salt (or soy sauce), 1 teaspoon of oligosaccharide (or sugar), 1 teaspoon of minced garlic, and 1 teaspoon of sesame oil. Also, add the finely chopped green onions (or scallions) and thinly sliced chili peppers (if using).

Gently mix all the ingredients with your hands, tossing them together until the seasoning is evenly distributed. Taste the salad and adjust the seasoning if needed, adding a bit more salt or soy sauce if it’s not salty enough. Finally, sprinkle with a pinch of sesame seeds for garnish. Your delicious, crispy, and perfectly seasoned bean sprout salad is now ready! It’s a wonderful addition to any meal or lunchbox.
