Main Ingredients

  • 2 handfuls of dried pollack ( Hwangtaech)
  • 50ml pear juice (adds sweetness and tenderness)

Seasoning Ingredients

  • 1 Tbsp gochujang (Korean chili paste)
  • 1/3 Tbsp minced garlic
  • 1/3 Tbsp sesame seeds (toasted ones add more flavor)
  • 1/3 Tbsp sesame oil
  • 1/3 Tbsp soy sauce (adjust according to the saltiness of the pollack)

Cooking Instructions

Step 1

First, prepare the dried pollack. Cut it into bite-sized pieces, about 2-3 cm long, using scissors or your hands. If they are too long, they can be difficult to eat, so cut them into an appropriate size.

Step 1

Step 2

Pour 50ml of sweet pear juice over the cut dried pollack and let it soak for about 10 minutes. The pear juice helps to soften the pollack and eliminate any unwanted fishy smell.

Step 2

Step 3

Once the dried pollack has sufficiently softened in the pear juice, gently squeeze out the excess moisture with your hands. Be careful not to squeeze too hard, as this could cause the pollack to break apart.

Step 3

Step 4

In a bowl, combine all the seasoning ingredients: 1 Tbsp gochujang, 1/3 Tbsp minced garlic, 1/3 Tbsp sesame seeds, 1/3 Tbsp sesame oil, and 1/3 Tbsp soy sauce. Stir well with a spoon until all the seasonings are thoroughly mixed.

Step 4

Step 5

Add the squeezed dried pollack to the prepared seasoning mixture. Gently mix and massage the ingredients with your hands, ensuring the seasoning coats the pollack evenly. This ‘massaging’ step is key for flavor.

Step 5

Step 6

Here’s a tip! For an enhanced flavor and chewier texture, you can lightly sauté the seasoned pollack in a pan with a little oil. However, today we’re finishing without stir-frying for a quicker and simpler dish that is still delicious right away!
