I once tried Chef Kim Soo-mi’s radish salad, but it didn’t quite suit my palate. After that, I discovered Chef Baek Jong-won’s recipe and was so impressed that it has become my go-to ever since! This Musaengchae is not only incredibly delicious but also perfect to enjoy right after making it. The best part? You don’t need to salt or pre-treat the radish; it comes together in just 10 minutes! Let’s make this perfectly crunchy, spicy, and sweet Baek Jong-won-style radish salad together!

  • Radish (julienned) – 4 handfuls
  • Scallions or Green Onions (white and green parts) – appropriate amount

Cooking Instructions

Step 1

First, wash the radish, peel it, and then julienne it thinly. Cutting it too thick can prolong cooking time and prevent the seasoning from penetrating well, so thin slices are key.

Step 2

Finely chop the scallions or green onions, using both the white and green parts equally. If you have pre-chopped and frozen scallions, you can certainly use those. Using fresh scallions will result in a more fragrant radish salad.

Step 3

Place the julienned radish into a large bowl. A wide bowl makes it much easier to mix and toss the ingredients.

Step 4

Add 2.5 tablespoons of Korean chili powder to the radish. Gently massage the radish with your hands to evenly coat it with the chili powder. This initial step helps to lightly season the radish and prepares it for the main seasoning.

Step 5

Once the radish is nicely colored with chili powder, it’s time to add the main seasonings. Add 1.5 tablespoons of sugar, 1.5 tablespoons of anchovy sauce, 1 tablespoon of minced garlic, and 1.5 tablespoons of vinegar. Also, add the chopped scallions and sesame seeds.

Step 6

Now, gently toss everything together to ensure the seasonings are evenly distributed. It’s important to preserve the radish’s crispiness, so avoid over-mixing. Toss gently until all ingredients are well combined for a deeper flavor.

Step 7

After mixing, always taste your radish salad! If it needs a bit more seasoning, add a tiny pinch of salt. A small amount of salt enhances the savory notes and perfectly balances the flavors. Adjust the seasoning to your preference. The salad is delicious to eat immediately!
