Fire Chicken Recipe (Spicy Fire Chicken with Fire Aroma and Mint)

Main Ingredients- 1 whole chicken, cut for stir-fry
- 2 cups fresh mint leaves
- 1 cup hot peppers (like Cheongyang peppers), finely chopped
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp olive oil
Spicy & Sweet Sauce- 2-3 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1/2 Tbsp sugar
- 2 Tbsp corn syrup or rice syrup
- 1 Tbsp fish sauce
- 1 Tbsp plum extract
- 2 Tbsp spicy Korean chili powder (gochugaru)
Chicken Marinade- Pinch of black pepper
- Pinch of garlic powder
- Pinch of ginger powder
- A splash of cooking wine (mirin or rice wine)
- 2-3 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1/2 Tbsp sugar
- 2 Tbsp corn syrup or rice syrup
- 1 Tbsp fish sauce
- 1 Tbsp plum extract
- 2 Tbsp spicy Korean chili powder (gochugaru)
Chicken Marinade- Pinch of black pepper
- Pinch of garlic powder
- Pinch of ginger powder
- A splash of cooking wine (mirin or rice wine)
Cooking Instructions
Step 1
First, let’s make the sauce. In a bowl, combine 2-3 Tbsp gochujang, 1 Tbsp soy sauce, 1/2 Tbsp sugar, 2 Tbsp corn syrup, 1 Tbsp fish sauce, 1 Tbsp plum extract, and 2 Tbsp spicy Korean chili powder. Stir everything together thoroughly with a spoon until well combined. Ensuring the sauce is evenly mixed is key for great flavor.
Step 2
Now, let’s prepare the chicken. Rinse the 1 whole chicken (cut for stir-fry) thoroughly under cold water and pat it completely dry with paper towels. Removing excess moisture is important to prevent any gamey smell and ensure a delicious cook. Make a few cuts into the chicken pieces to help the marinade penetrate. Then, add the marinade ingredients: a pinch of black pepper, a pinch of garlic powder, a pinch of ginger powder, and a splash of cooking wine. Mix well with your hands, coating all the chicken pieces. Let it marinate for about 10 minutes to allow the flavors to soak in.
Step 3
Time to start cooking the chicken! Heat 1 Tbsp of olive oil in a pan over medium-high heat. Add the marinated chicken pieces and sear them until they are nicely browned on all sides. Once the chicken is partially cooked, add 1 Tbsp of minced garlic and stir-fry until fragrant. Cover the pan and reduce the heat to medium-low. Cook until the chicken is almost fully cooked through. For an extra smoky flavor, you can use a kitchen torch to lightly char the surface of the chicken pieces. Once cooked, pour all the prepared sauce into the pan. Add the remaining 1 Tbsp of olive oil and toss to coat the chicken evenly. Taste the sauce and add a little more sugar if you prefer it sweeter. For an even deeper smoky aroma, briefly torch the sauced chicken again. Finally, drizzle in 1 Tbsp of sesame oil for a glossy finish and nutty fragrance. This dish is best served with the pre-chopped fresh mint and hot peppers for a refreshing and spicy kick!
