Spicy & Sweet Gochujang Anchovy Stir-fry

We’re making a delicious anchovy stir-fry with a gochujang (Korean chili paste) sauce, a beloved national side dish! Its spicy and sweet flavor is so addictive, it will make you finish a whole bowl of rice. It’s also incredibly easy to make without any special ingredients.

Main Ingredients

  • 300g Gobal anchovies (medium size)
  • 5 cloves garlic
  • A little bit of green onion
  • 2 Korean chili peppers (cheongyang)

Cooking Instructions

The anchovies we’re using today are medium-sized ‘Gobal’ anchovies. These are excellent for both making broth and stir-frying, making them very versatile. Please prepare 300g.

First, thinly slice 5 cloves of garlic. Add a generous amount of cooking oil to a frying pan and slowly sauté the sliced garlic over low heat. The garlic will turn golden brown, creating delicious garlic-infused oil. Be careful not to burn it while sautéing.

Once the garlic oil has sufficiently infused, add all the prepared seasoning ingredients. Mix 1.5 Tbsp Gochujang, 1 Tbsp Gochugaru, 1.5 Tbsp Soy Sauce, 1 Tbsp Maesilcheong, 1/3 Tbsp Ginger Extract, and 2 Tbsp Cooking Wine (or soju). Stir well over medium-low heat until the mixture starts to bubble. Cook while stirring to prevent burning.

As soon as the seasoning starts to bubble vigorously, turn off the heat immediately. Be cautious, as cooking for too long can cause the seasoning to burn.

Check the condition of your anchovies. If they feel a bit damp or moist, it’s a good idea to microwave them briefly to make them crispy before use. However, if you plan to stir-fry them right away, you can use them without any prior drying. Now, add the 300g of anchovies to the cooked seasoning and quickly toss them so the seasoning coats the anchovies evenly (Shake, shake!).

Now, turn the heat back on to medium and stir-fry the anchovies. They will start to become glossy as they meld with the sauce. In the middle of stir-frying, add a little chopped green onion and 2 thinly sliced Korean chili peppers (seeds removed) and stir-fry them together. This will add a spicy kick and aromatic flavor. Finally, drizzle a little sesame oil for fragrance and give it a final mix. It’s ready!
