- 1 Tbsp Oligodang (corn syrup, or other liquid sweetener)
- 1 Tbsp Maesilcheong (plum extract)
- 1 pinch Black Pepper
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, let’s make the delicious glaze for our Gochujang Grilled Mackerel. In a bowl, combine 2 tablespoons of gochujang, 1 tablespoon of mirin, 1 tablespoon of soy sauce, 1 tablespoon of oligodang, 1 tablespoon of maesilcheong, and a pinch of black pepper. Mix them well. Finally, add 1 tablespoon of sesame oil and 1 tablespoon of toasted sesame seeds for a nutty aroma. Stir everything together until the ingredients are evenly incorporated to create a flavorful glaze.
Step 2
Now, prepare your cleaned mackerel fillets. Mackerel often comes lightly salted, so keep this in mind when seasoning. Lightly grease your pan or use a non-stick skillet to prevent sticking. Over medium heat, grill both sides of the mackerel until golden brown and slightly crispy. You’ll notice a lovely toasty aroma as the surface cooks.
Step 3
Once the mackerel is partially cooked, generously brush the prepared spicy and sweet gochujang glaze over the fish. Using a pastry brush ensures an even coating, but you can also use a spoon to spread it. It’s important to coat the entire surface of the mackerel thoroughly with the glaze.
Step 4
After applying the glaze, reduce the heat to low. Cooking over low heat allows the glaze to caramelize beautifully without burning, ensuring the fish is cooked through and remains tender. Gently flip the mackerel back and forth, cooking until the glaze is slightly sticky and the fish is cooked through. Once your glossy and appetizing Gochujang Grilled Mackerel is ready, serve it hot with a bowl of steamed rice. It’s a true rice-lover’s delight!
