- 2 Tbsp Soy Sauce
- 0.5 Tbsp Oyster Sauce
- 0.5 Tbsp Sriracha Sauce
- 4 Tbsp Mirin (or rice wine)
- 1 Tbsp Plum Extract (or syrup)
- 1 Tbsp Oligodang (corn syrup or rice syrup)
- Pinch of Black Pepper
- 1 Tbsp Chili Oil
- 3 Tbsp Gochujang (Korean chili paste)
- 1.5 Tbsp Gochugaru (Korean chili powder)
- 2 Tbsp Soy Sauce
- 0.5 Tbsp Oyster Sauce
- 0.5 Tbsp Sriracha Sauce
- 4 Tbsp Mirin (or rice wine)
- 1 Tbsp Plum Extract (or syrup)
- 1 Tbsp Oligodang (corn syrup or rice syrup)
- Pinch of Black Pepper
- 1 Tbsp Chili Oil
Cooking Instructions
Step 1
First, prepare the onion. Peel about 1/3 of an onion and slice it thinly into strips, about 0.5cm thick. Ensure the slices are not too thick so the marinade can penetrate evenly.
Step 2
Now, let’s make the delicious marinade. In a bowl, combine 4 Tbsp of Mirin, 2 Tbsp of Soy Sauce, 1 Tbsp of Plum Extract, and 1 Tbsp of Oligodang. Add 3 Tbsp of Gochujang for that signature spicy kick, and 1.5 Tbsp of Gochugaru for depth of flavor. Stir in 0.5 Tbsp of Oyster Sauce and 0.5 Tbsp of Sriracha Sauce for extra umami and a touch of heat. Finish with a pinch of freshly ground Black Pepper. Whisk all the ingredients together until well combined to create a smooth marinade.
Step 3
Place the 450g of pork belly into the bowl with the marinade. Add the sliced onion. Use your hands to gently massage and mix everything together, ensuring the pork belly and onion are thoroughly coated. While you can cook it immediately, for an even richer flavor, cover the bowl with plastic wrap and let it marinate in the refrigerator for at least a few hours, or ideally overnight. This allows the flavors to meld beautifully.
Step 4
Set your stovetop to medium heat. Heat a large skillet or frying pan over medium heat and add 1 Tbsp of chili oil. Swirl the pan to coat the bottom lightly. Preheating with chili oil adds a wonderful nutty aroma and prevents sticking.
Step 5
Carefully add all the marinated pork belly and onion mixture to the preheated pan. Spread the meat and vegetables out in an even layer to ensure even cooking.
Step 6
Cook the pork belly, flipping it frequently with tongs or chopsticks to ensure it cooks evenly and doesn’t burn. The onions will caramelize nicely. If you have a large amount of meat, it might be best to cook it in two batches, or cover the pan loosely with a lid for the initial few minutes to help the pork cook through before browning it thoroughly. Once golden brown and cooked through, your delicious Gochujang Pork Belly is ready to be enjoyed!
