  • 1/2 green onion (scallion)
  • 3g fresh ginger (or 0.5 Tbsp minced ginger)

  • 0.5 Tbsp minced garlic
  • 2 Tbsp cooking wine (mirin or similar)
  • 1 Tbsp anchovy sauce (or fish sauce)
  • 1 Tbsp soy sauce
  • 1.5 Tbsp brown sugar
  • 0.5 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • A pinch of black pepper
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, prepare your vegetables. Slice the onion thinly into strips. Cut the Korean chili peppers and green onion diagonally (on the bias). (Tip: Pre-chopping your vegetables will save you time during cooking.)

Step 1

Step 2

Heat a little cooking oil in a pan over medium-high heat. Add the thinly sliced fresh ginger (or minced ginger) and stir-fry for about 10 seconds until fragrant. Once the ginger aroma is released, add the thinly sliced pork belly, sliced onion, chili peppers, and minced garlic to the pan.

Step 2

Step 3

Now, add all the seasoning ingredients to the pan. Measure out 2 Tbsp cooking wine, 1 Tbsp anchovy sauce, 1 Tbsp soy sauce, 1.5 Tbsp brown sugar, 0.5 Tbsp gochujang, and 1 Tbsp gochugaru.

Step 3

Step 4

(Tip: Adjust the amount of seasoning according to the quantity of pork belly and your personal preference. If you like it spicier, add more gochujang or gochugaru. If you prefer it sweeter, increase the sugar.)

Step 4

Step 5

Stir-fry vigorously over high heat for about 3 to 5 minutes. Cook until the pork belly is cooked through and slightly crispy, and the onions and peppers are softened.

Step 5

Step 6

Finally, add the diagonally sliced green onion and give it a quick stir to combine.

Step 6

Step 7

Turn off the heat. Sprinkle in a pinch of black pepper and sesame seeds for added flavor and aroma.

Step 7

Step 8

Give it a final mix with the residual heat from the pan. Your delicious Gochujang Pork Belly Stir-fry is now complete! Enjoy it with a warm bowl of rice.
