Main Ingredients
  • Pork Belly (sliced for stir-fry) 2 ‘geun’ (approx. 600g)
  • 1 Onion
  • 1 Green Onion (Scallion)
  • 1 bunch Buchu (Garlic Chives)
  • 5 Shiitake Mushrooms

Spicy & Sweet Sauce
  • 4 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Sugar
  • 1 Tbsp Oligodang (corn syrup or other liquid sweetener)
  • 1 tsp Black Pepper
  • 2 Tbsp Mirin (rice wine)
  • 4 Tbsp Soy Sauce
  • 2 Tbsp Sesame Seeds
  • 2 Tbsp Minced Garlic

Cooking Instructions

Step 1

First, prepare your vegetables. Peel the onion and slice it into thick strips. Thinly slice the green onion. Wash the buchu (garlic chives) and cut them into approximately 5cm lengths. Remove the stems from the shiitake mushrooms and slice them thinly.

Step 2

Let’s make the delicious gochujang sauce! In a bowl, combine 4 Tbsp gochujang, 4 Tbsp gochugaru, 2 Tbsp sugar, 1 Tbsp oligodang, 1 tsp black pepper, 2 Tbsp mirin, 4 Tbsp soy sauce, and 2 Tbsp minced garlic. Mix everything thoroughly until well combined and smooth.

Step 3

Place the prepared pork belly and all the chopped vegetables into the bowl with the sauce. Gently mix and massage the ingredients with your hands, ensuring the sauce coats every piece of pork and vegetable. Finally, add 2 Tbsp sesame seeds and mix lightly to finish.

Step 4

Heat a wok or a large skillet over medium-low heat. Add the marinated pork belly and vegetables. Stir-fry gently, allowing the ingredients to meld and cook through.

Step 5

A crucial tip: Cooking over high heat can burn the gochujang sauce. It’s best to maintain a medium-low heat and stir occasionally to prevent burning.
