  • 1 Onion
  • 1 Green onion
  • 4 Cheongyang peppers (optional, adjust for spice)
  • 1.5 Tbsp minced garlic (1 Tbsp + 1/3 Tbsp)
  • 6 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Oligodang (corn syrup) or barley malt syrup
  • 4 Tbsp Soy sauce
  • 1 Tbsp Sesame oil
  • 2 Tbsp Mirin (or cooking sake)
  • 1 Tbsp Toasted sesame seeds
  • Pinch of black pepper

1. The key to delicious pork stir-fry is fresh meat! Prepare 680g of fresh pork slices, ideal for ‘jumeok-gui’ or ‘duruchigi’ style stir-fries. Cut the meat into bite-sized pieces (about 2-3 cm) for a pleasant texture. While cooking it whole is also an option, cutting it helps the marinade penetrate better.

2. Chop the vegetables into larger pieces to enhance the flavor. Cut 1 green onion into 4cm lengths at an angle. Slice 1 onion into thick strips, about 1cm wide. If you enjoy a spicy kick, thinly slice 4 Cheongyang peppers diagonally, rinse them lightly under cold water, and remove the seeds. (Omit or reduce the Cheongyang peppers if you prefer less heat.)

3. Now, let’s marinate! Place the sliced pork in a large bowl. Add the prepared green onion, onion, and Cheongyang peppers. Mix in 1.5 Tbsp minced garlic, 6 Tbsp Gochujang, 4 Tbsp Gochugaru, 3 Tbsp Oligodang (sweetness can be adjusted to your liking), 4 Tbsp soy sauce, 1 Tbsp sesame oil, 2 Tbsp Mirin, 1 Tbsp toasted sesame seeds, and a pinch of black pepper. Gently massage the ingredients with your hands until everything is well combined. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. This marinating time significantly enhances the depth of flavor. (Tip: If you have plum syrup (maesilcheong), you can use it in a 1:1 ratio with Oligodang for a more complex sweetness.)

4. Time to cook! Transfer the marinated pork to a frying pan and turn the heat to medium. Stir occasionally with a wooden spatula for about 10 minutes, ensuring the pork doesn’t stick or burn.
