- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, peel the skin off both the potatoes and the onion. Wash them thoroughly under running water. Preparing fresh ingredients is the start of a delicious stew.
Step 2
Cut the potatoes into bite-sized pieces, about 1.5cm thick. Cutting them slightly thicker prevents them from breaking apart during cooking and maintains a pleasant texture. (You can also julienne them for a different feel!)
Step 3
To remove excess starch from the potatoes and achieve a cleaner taste, fill a bowl with plenty of cold water and add 1 teaspoon of coarse salt. Submerge the cut potatoes in this mixture for about 10 minutes.
Step 4
After 10 minutes, drain the potatoes and discard the water. Your potato preparation is complete! Cleanly prepped potatoes will enhance the stew’s flavor.
Step 5
Spread the prepared potatoes evenly in a wide pan or pot. Add 250ml of water. Now, we’ll cook the potatoes until they are tender, almost like boiling them.
Step 6
While the potatoes are cooking, sprinkle about 1-2 tablespoons of sugar over them. This is one of the secrets to subtly sweetening the potatoes and enhancing their savory notes.
Step 7
Stir the potatoes gently with a spatula occasionally to prevent them from sticking to the bottom of the pan. By the time the potatoes are almost cooked, most of the water should have evaporated.
Step 8
Now, pour the pre-made ‘Spicy & Sweet Gochujang Potato Stew Sauce’ evenly over the potatoes. This is the highlight of this delicious stew!
Step 9
After adding the sauce, simply let it simmer together with the potatoes over medium-low heat until the sauce thickens and coats the potatoes. It’s not complicated at all!
Step 10
Add the onion when the potatoes are partially cooked and the sauce has started to reduce slightly. Adding the onion and simmering further will add a delightful sweetness. Feel free to add green onions or carrots if you like; they pair wonderfully!
Step 11
Once the onions are added, cover the pan with a lid and continue to simmer over medium heat for about 5 minutes. This allows the flavors to meld and the ingredients to become perfectly tender.
Step 12
When the time is up and you lift the lid, you’ll find a glistening, chewy Gochujang Potato Stew with minimal sauce, cooked to perfection! Doesn’t it make your mouth water just looking at it?
Step 13
Finally, just before turning off the heat, drizzle a little sesame oil and sprinkle some toasted sesame seeds on top to finish. The nutty aroma will elevate the flavor even further.
Step 14
You can cut the potatoes into cubes or julienne them – both ways are delicious! No matter how you prepare them, this homemade Gochujang Potato Stew will be the best side dish for your meal. Enjoy!
