Main Ingredients

  • 3-4 medium potatoes
  • 1 medium onion
  • A pinch of sesame seeds (for garnish)
  • 1/2 cup water

Seasoning

  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Oligodang (corn syrup) or corn syrup
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil

Cooking Instructions

Step 1

First, peel the potatoes and wash them thoroughly. Cut them into bite-sized cubes, about 1.5 cm thick. Slice the onion similarly. Heat a generous amount of cooking oil in a pan over medium heat. Add the cubed potatoes and stir-fry. Cook until the potatoes become translucent and start to soften slightly – this is a key step for texture.

Step 1

Step 2

Once the potatoes are somewhat cooked and appear semi-translucent, add the sliced onion to the pan. Continue to stir-fry them together. Cook until the onion softens and releases its sweetness, mingling with the potatoes. Be careful to prevent the potatoes from sticking to the bottom of the pan as you stir-fry.

Step 2

Step 3

While the potatoes and onions are stir-frying, let’s prepare the delicious seasoning sauce! In a bowl, combine 1 Tbsp Gochujang, 2 Tbsp Soy Sauce, 1 Tbsp Gochugaru, 2 Tbsp Oligodang (or corn syrup), 1 Tbsp Minced Garlic, and 1 Tbsp Sesame Oil. Whisk everything together until well combined and smooth, ensuring there are no lumps. Proper mixing is crucial.

Step 3

Step 4

When the ingredients are nicely stir-fried, pour the prepared seasoning sauce into the pan. Gently mix with a spatula, ensuring the sauce coats the potatoes and onions evenly. It’s important to manage the heat to prevent the sauce from burning.

Step 4

Step 5

After the potatoes are cooked and the sauce has thickened slightly, add 1/2 cup of water (about half a standard paper cup). Adding water helps to prevent the sauce from becoming too salty or dry, and it also gives the dish a nice sheen.

Step 5

Step 6

Once the water is added, cover the pan with a lid and let it simmer over low heat for about 5-7 minutes. Cook until the potatoes are tender and the sauce has reduced to a nice glaze. Finally, turn off the heat and garnish with a sprinkle of sesame seeds. Your delicious Gochujang Potato Stir-Fry is ready! Enjoy it with a bowl of warm rice.
