- Vegetable oil, for cooking
Spicy & Sweet Sauce- 2 Tbsp Gochujang (Korean chili paste)
- 0.5 Tbsp minced garlic
- 1.5 Tbsp Korean soy sauce (Jin Ganjang)
- 1 Tbsp sugar
- 1.5 Tbsp corn syrup or oligodang
- 0.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
- 2 Tbsp Gochujang (Korean chili paste)
- 0.5 Tbsp minced garlic
- 1.5 Tbsp Korean soy sauce (Jin Ganjang)
- 1 Tbsp sugar
- 1.5 Tbsp corn syrup or oligodang
- 0.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, rinse the dried shredded squid (Jinjimi-chae) in cold water a couple of times. This helps to remove excess salt and any potential fishy smell.
Step 2
After rinsing, drain the squid thoroughly in a colander. If there’s still some moisture, gently pat it dry with paper towels. This ensures the sauce adheres well.
Step 3
Check the length of the squid strips. If any are too long, cut them in half with scissors to make them a more manageable size for eating.
Step 4
In a small bowl, combine 2 Tbsp Gochujang, 0.5 Tbsp minced garlic, 1.5 Tbsp soy sauce, 1 Tbsp sugar, 1.5 Tbsp corn syrup (or oligodang), 0.5 Tbsp gochugaru, and 1 Tbsp sesame oil. Mix well with a spoon to create the sauce.
Step 5
Add 2 Tbsp of mayonnaise to the prepared dried squid. The mayonnaise will help keep the squid tender and add a subtle richness.
Step 6
Using chopsticks, gently toss the squid with the mayonnaise until evenly coated. Let it sit for a moment to allow the mayonnaise to be absorbed. This step is key to achieving a moist and savory texture.
Step 7
Heat a lightly oiled pan over medium heat. Add the prepared Gochujang sauce.
Step 8
Once the sauce begins to bubble and simmer, let it cook until it reaches the center of the pan, then immediately turn off the heat. Be careful not to overcook, as the sauce can burn easily.
Step 9
Allow the cooked sauce to cool slightly. Adding it when it’s too hot can make the squid tough. Pour the slightly cooled sauce over the squid.
Step 10
Gently mix and massage the squid with your hands, ensuring the sauce is evenly distributed. This step helps to meld the flavors beautifully.
Step 11
Finally, sprinkle a generous amount of toasted sesame seeds over the top for a nutty aroma and flavor. Your delicious Gochujang Stir-Fried Dried Shredded Squid is ready to be enjoyed!
