Main Ingredients

  • 300g fresh jalapeños
  • 2 Tbsp olive oil

Seasoning Ingredients

  • 100ml water
  • 50ml cooking wine (mirin or rice wine)
  • 1.5 Tbsp soy sauce for soup (guk-ganjang)
  • 2 Tbsp oligosaccharide (adjust sweetness to taste)
  • 3 Tbsp minced garlic
  • 4 Tbsp dried shrimp powder (Hong-saeu recommended)
  • 0.7 Tbsp salt (adjust to taste)

Cooking Instructions

Step 1

First, wash the 300g of fresh jalapeños thoroughly under running water. After washing, place them on a colander to drain any excess water completely. Carefully remove the stems with a knife.

Once the jalapeños are drained, place them on a cutting board. Make a cross-shaped incision into each jalapeño, cutting about halfway through. This will make chopping easier. Then, finely mince the jalapeños to your desired consistency. For a slight texture, avoid mincing them too finely.

Transfer the minced jalapeños into a clean mixing bowl. Set aside for now.

Now, heat a wok or a deep pan over medium-high heat. Once the wok is hot, add 2 tablespoons of olive oil. When the oil is warm, add the minced jalapeños and stir-fry for about 5 minutes. This process will soften the jalapeños and mellow their spiciness, enhancing their flavor.

Once the jalapeños are sufficiently sautéed, add the seasoning ingredients in order. First, pour in 100ml of water, followed by 50ml of cooking wine, 1.5 Tbsp of soy sauce for soup, and 2 Tbsp of oligosaccharide. Then, add 3 Tbsp of minced garlic, 4 Tbsp of dried shrimp powder, and finally 0.7 Tbsp of salt. (The shrimp powder is highly recommended for its added depth of flavor!)

Stir everything together to combine the seasonings evenly. Then, reduce the heat to medium-low and simmer until most of the water has evaporated and the mixture thickens into a relish consistency. Stir occasionally to prevent sticking to the bottom of the pan.

When the water has reduced and all the ingredients are well combined, releasing a delicious aroma, your jalapeño relish is ready! It tastes even better once it has cooled slightly. Store in a clean container in the refrigerator. Enjoy it as a side dish for rice, a topping for bibimbap, or to add flavor to various stir-fried dishes!
