Today, we’re making everyone’s favorite Jeyuk Bokkeum! I specifically bought pork shoulder cut for braising so we could slice it thickly and enjoy the rich meat flavor. How about Jeyuk Bokkeum for tonight’s dinner menu?
Main Ingredients- Pork shoulder (for braising) 500g
- 1 large green onion
Seasoning- 1 Tbsp sesame oil
- 1 Tbsp soybean paste (doenjang)
- 1 Tbsp sugar
- 2 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, thinly slice the large green onion. Set aside the white and green parts separately, as they can be used at different stages for flavor and garnish.
Step 2
Cut the 500g of pork shoulder into thick slices, about 1cm thick. I specifically chose pork shoulder cut for braising so we can enjoy its substantial texture and rich meat flavor.
Step 3
Heat 1 Tbsp of sesame oil and 1 Tbsp of soybean paste (doenjang) in a pan over low heat. Stir-fry for about 1 minute. This step is key to bringing out a savory depth and umami flavor that enhances the overall dish.
Step 4
Now, let’s make the delicious sauce. To the stir-fried doenjang, add 1 Tbsp sugar, 2 Tbsp gochugaru (red pepper flakes), 1 Tbsp soy sauce, 1 Tbsp oyster sauce, and 1 Tbsp minced garlic. Mix everything well until the sauce is evenly combined.
Step 5
Add a little cooking oil to the pan and place the sliced pork in. Stir-fry over medium heat for about 2 minutes, breaking up any clumps, until the pork is no longer pink on the outside.
Step 6
Once the pork is partially cooked, add all the prepared sauce to the pan. Reduce the heat to low and continue to stir-fry gently for about 3 minutes, allowing the sauce to coat the pork evenly. Be careful not to burn the sauce.
Step 7
Pour in 200ml of water. Bring to a simmer over medium heat and cook for 10-15 minutes. You can cook with the lid on or off, allowing the sauce to reduce and the flavors to meld into the pork.
Step 8
Finally, add the sliced green onion and stir-fry briefly until just wilted. Your delicious Jeyuk Bokkeum is ready! For a touch more sweetness and umami, feel free to add a little more rice syrup (oligo당) or oyster sauce before serving. Enjoy this fantastic dish with a side of warm rice!
