How to Make Delicious Ketchup Quail Egg Stir-fry
I didn’t know ‘quail egg stir-fry’ was a dish until I discovered this ketchup-based version! It pairs wonderfully with meats, so I decided to add some sausage for extra flavor and texture. This dish is perfect as a side for rice, a snack for kids, or even as a savory appetizer with drinks.
Main Ingredients- 25 quail eggs
- 1 handful of sausages (approx. 100-150g)
Spicy & Sweet Ketchup Sauce- 2 Tbsp sugar (adjust sweetness)
- 1.5 Tbsp soy sauce
- 1 Tbsp gochujang (Korean chili paste – adjust spiciness)
- 4 Tbsp ketchup
- 1 Tbsp mirin (rice wine – for removing odor and adding sheen)
- 1/3 cup water (approx. 60ml)
- 2 Tbsp sugar (adjust sweetness)
- 1.5 Tbsp soy sauce
- 1 Tbsp gochujang (Korean chili paste – adjust spiciness)
- 4 Tbsp ketchup
- 1 Tbsp mirin (rice wine – for removing odor and adding sheen)
- 1/3 cup water (approx. 60ml)
Cooking Instructions
Step 1
First, hard-boil the 25 quail eggs. Place them in cold water and bring to a boil, then simmer for about 12-15 minutes until fully cooked. Immediately transfer the boiled eggs to cold water to cool. Once cooled, carefully peel the shells. Pat the peeled quail eggs dry with a paper towel.
Step 2
In a bowl, combine all the sauce ingredients: 2 Tbsp sugar, 1.5 Tbsp soy sauce, 1 Tbsp gochujang, 4 Tbsp ketchup, 1 Tbsp mirin, and 1/3 cup water. Whisk well until the sugar is dissolved and there are no lumps. The amount of gochujang can be adjusted to control the level of spiciness.
Step 3
Slice the sausages into bite-sized pieces (e.g., diagonally cut into 1-2cm thick slices or round cuts). Heat about 1 Tbsp of cooking oil in a pan over medium heat. Add the sliced sausages and stir-fry until they are lightly golden brown. The fat rendered from the sausages will add flavor.
Step 4
Once the sausages are golden brown, add the prepared peeled quail eggs to the pan. Stir-fry them together with the sausages for a minute or two. Lightly browning the surface of the quail eggs will help them absorb the sauce better.
Step 5
Finally, pour all the prepared ketchup sauce into the pan. Stir everything together gently to coat the quail eggs and sausages evenly with the sauce. Continue to cook over medium-low heat for another 2-3 minutes, stirring occasionally, until the sauce thickens and becomes glossy. Garnish with sesame seeds or chopped green onions if desired. Enjoy!
