The refreshing crunch of kimchi combined with a sweet and spicy sauce creates a delightful meal. It’s also a great way to use up leftover kimchi, and anyone can easily follow along.
Main Ingredients- 2 cups of ripe kimchi (kimchi that has fermented and is sour)
- 2 bundles of somyeon (thin wheat noodles, approx. 2 servings)
- 1 hard-boiled egg (for topping)
- A small amount of bean sprouts or your favorite greens (for topping)
Cooking Instructions
Step 1
First, prepare your toppings. Hard-boil the egg and slice it in half. Wash and prepare your chosen vegetables. Thinly sliced cucumber is a fantastic addition if you have one. Bean sprouts add a nice crunch and visual appeal.
Step 2
Now, let’s cook the somyeon noodles. Bring a large pot of water to a rolling boil. Add the somyeon and cook. To achieve a chewier texture, add a splash of cold water whenever the foam rises to the surface while boiling. Cook for about 3-4 minutes until al dente.
Step 3
Once cooked, drain the noodles in a colander. Immediately rinse them under cold running water, gently rubbing them to remove excess starch. This step prevents the noodles from becoming mushy and keeps them perfectly springy. Ensure you drain them thoroughly after rinsing.
Step 4
Finely chop the ripe kimchi. In a bowl, combine the chopped kimchi with the ingredients for the spicy & sweet sauce: gochujang (1.5 Tbsp), sugar (1.5 Tbsp), and sesame oil (2 Tbsp). Mix everything well and let it marinate for a few minutes so the flavors can meld.
Step 5
Add the well-drained somyeon noodles to the marinated kimchi. Gently toss and mix everything together, ensuring the noodles and kimchi are evenly coated with the delicious sauce. Add the finishing sesame oil (1 Tbsp) now for extra fragrance and flavor.
Step 6
Transfer the mixed kimchi bibim guksu to a serving bowl. Arrange the prepared hard-boiled egg halves and fresh greens on top for a beautiful and appetizing presentation.
Step 7
This sweet, sour, and spicy Kimchi Bibim Guksu is a refreshing dish, ideal for hot summer days or when your appetite needs a boost. Its simplicity makes it a go-to meal.
Step 8
Finally, sprinkle generously with toasted sesame seeds for that extra nutty aroma and flavor. Enjoy your delicious homemade Kimchi Bibim Guksu!
