- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Vinegar (adjust to your preferred tanginess)
- 1 Tbsp Soy sauce (for umami depth)
- 1 Tbsp Sugar (add more if you like it sweeter)
- 1 Tbsp Jocheong (rice syrup, can substitute or combine with sugar for a glossy finish)

Cooking Instructions
Step 1
Prepare all your ingredients. Finely chop the kimchi into bite-sized pieces. To make cooking smoother, mix all the sauce ingredients in a small bowl beforehand.
Step 2
Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once boiling, add the somyeon noodles.
Step 3
As the noodles begin to boil and rise to the surface, pour in 1 cup of cold water. This step helps to make the noodles chewier. Bring it back to a boil, then turn off the heat and check if the noodles are cooked. (They usually take about 7-10 minutes to cook).
Step 4
Drain the cooked noodles in a colander. Rinse them thoroughly under cold running water. Rinsing with cold water prevents the noodles from getting mushy and keeps them delightfully springy.
Step 5
Place the drained noodles into a bowl and mix in 1 tablespoon of sugar. This helps the sauce adhere better to the noodles.
Step 6
Add about half a tablespoon to 1 tablespoon of gochujang. Adjust the spiciness based on the saltiness of your kimchi and your personal preference.
Step 7
Add 1 tablespoon of soy sauce for a boost of umami.
Step 8
Stir in 1 tablespoon of jocheong for sweetness and a glossy sheen. You can substitute this with sugar or adjust the amount as needed.
Step 9
Add 3 tablespoons of kimchi brine for a refreshing flavor and the chopped kimchi. Feel free to adjust the amount of kimchi to your liking.
Step 10
Finally, sprinkle generously with sesame seeds and drizzle with 1 tablespoon of sesame oil. Now, use chopsticks to thoroughly mix all the ingredients, ensuring the sauce coats the noodles completely.
Step 11
Your delicious Kimchi Bibim Guksu is ready! It looks appetizing, doesn’t it? Enjoy your meal!
