Main Ingredients- 100g Spam
- 30g Glass noodles
- 1/2 Tbsp Cooking oil
- 1 stalk Scallion
- 1 cup Aged kimchi + Scallion kimchi (mixed half and half)
- 1/4 cup Water
- 1/2 Tbsp Oligosaccharide (adjust sweetness as needed)
- 1/2 Tbsp Plum extract (for added depth of flavor)
Cooking Instructions
Step 1
Prepare 100g of Spam. Use the back of a knife to mash it, then finely mince it. Mincing it this way will result in a softer texture after stir-frying.
Step 2
Soak 30g of glass noodles in water for about 15-20 minutes until softened. Once rehydrated, drain and cut them into bite-sized pieces. You can cut them slightly thicker if you prefer a chewier texture.
Step 3
Heat a pan over medium heat and add 1/2 Tbsp of cooking oil. Add the minced Spam and stir-fry until it becomes lightly browned. While the Spam is cooking, thinly slice the white part of 1 stalk of scallion and add it to the pan. Stir-frying them together will enhance the aroma and flavor.
Step 4
Finely chop 1 cup of kimchi, mixing equal parts of well-fermented aged kimchi and scallion kimchi. Add the chopped kimchi to the pan and stir-fry it along with the Spam and scallions. It’s important to stir-fry the kimchi until it softens and most of the moisture has evaporated.
Step 5
Once the kimchi is well-cooked and tender, add the prepared glass noodles to the pan. Stir-fry them together, ensuring the noodles absorb the flavors from the kimchi mixture.
Step 6
As the glass noodles turn translucent and begin to soften, pour in 1/4 cup of water. Next, add 1/2 Tbsp of oligosaccharide and 1/2 Tbsp of plum extract. Stir everything together until well combined. Continue to cook for about 1-2 minutes until the sauce thickens slightly, creating a glossy and delicious glaze.
Step 7
Finally, thinly slice the green parts of the scallion diagonally and add them to the pan. Stir-fry briefly. The fresh aroma and color of the scallions will enhance the overall appeal of the rice bowl.
