Main Ingredients
- 350g boneless chicken, coated with oil
- 1 cup well-fermented kimchi, finely chopped
- 1/4 onion, thinly sliced
- 1/4 yellow bell pepper, thinly sliced
- 1/4 red bell pepper, thinly sliced
- 3 button mushrooms, sliced
- 1 Tbsp corn kernels, drained
- 2-3 Tbsp cooking oil
- 1 cup pizza cheese (generous amount)
- Pinch of parsley flakes (for garnish)

- 2 Tbsp store-bought seasoned chicken sauce
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 3 Tbsp tomato sauce
- 1/3 cup water (for adjusting consistency)

Cooking Instructions
Step 1
First, lightly coat the boneless chicken pieces with cooking oil. This will help them become extra crispy when cooked. Place the prepared chicken in an air fryer and cook at 200°C (390°F) for about 13 minutes, or until golden brown. If you prefer, you can also deep-fry them until golden.
Step 2
Thinly slice the onion. Slice the yellow and red bell peppers into similar strips. Slice the button mushrooms into manageable pieces for a fresh textural contrast.
Step 3
Heat 2-3 tablespoons of cooking oil in a pan over medium-high heat. Add the sliced onions and mushrooms, and sauté until fragrant and the onions become translucent. Then, add the chopped kimchi and bell peppers. Stir-fry together until the kimchi softens slightly. Sautéing kimchi over high heat quickly helps to evaporate excess moisture and concentrate its flavor.
Step 4
To the sautéed vegetables and kimchi, add the corn kernels and all the prepared sauce ingredients (seasoned chicken sauce, soy sauce, sugar, tomato sauce, and water). Stir everything together and cook over medium-low heat until the sauce thickens to your desired consistency. Feel free to adjust the seasoning to your taste if it’s too salty or bland.
Step 5
Transfer the cooked kimchi mixture to an oven-safe dish or skillet. Arrange the crispy fried chicken pieces on top. Finally, generously sprinkle pizza cheese all over the chicken, ensuring full coverage for a satisfying melt.

Microwave the dish for about 2 minutes, or until the cheese is melted and bubbly. Alternatively, you can place it in the oven or air fryer at a moderate temperature until the cheese is golden and melted. Finish with a sprinkle of parsley flakes for a beautiful presentation.
