Noodles & Toppings- Somen noodles, 2 servings (approx. size of 2 US quarters)

- Assorted stir-fried vegetables (e.g., Stir-fried water spinach, 1/2 plate; Stir-fried zucchini, 1/2 plate)
- Pork belly, 150g
Bibim Sauce- Chogochujang (spicy-sweet red pepper paste), 8 Tbsp
- Sesame oil, 1 Tbsp
- Toasted sesame seeds, a pinch

Cooking Instructions
Step 1
First, place a pot of water on the stove to boil for the noodles. While the water heats up, prepare your ingredients. Wash and thinly slice 10 lettuce leaves for garnish.

Stir-fry the water spinach with oyster sauce for added flavor. Feel free to substitute with other available blanched or stir-fried vegetables you have at home, such as bean sprouts or spinach.
Step 3
Julienne the zucchini into bite-sized strips. In a pan, cook the zucchini with a pinch of red pepper powder and salted shrimp (saeujeot), stirring gently until tender to enhance its savory taste.

Grill the pork belly over medium heat until crispy. Once cooked, cut the pork belly into bite-sized pieces for easy eating.
Step 5
Once the water is at a rolling boil, add the somen noodles. To achieve a chewy texture, bring the water to a boil, then add a little cold water, repeating this process 3 times. To check for doneness, take a few strands of noodles and place them in cold water. If they turn transparent, they are perfectly cooked.

Rinse the cooked noodles thoroughly under cold running water, rubbing gently to remove excess starch. This step is crucial for a clean taste. Rinse about 3 times until the water runs clear, then drain them well in a colander.

In a bowl with the drained noodles, add 8 tablespoons of chogochujang and 1 tablespoon of sesame oil. Gently mix everything together until the noodles are well coated. Adjust the amount of chogochujang to your preference. If you like it spicier, add more gochujang; for a sweeter taste, add a little sugar or corn syrup.
Step 8
