A delightful skewer treat featuring savory pork belly, chewy rice cakes, and plump Vienna sausages, all coated in a mouthwatering spicy and sweet sauce. It’s a perfect snack with a fantastic blend of textures and flavors.
Main Ingredients- 3 strips Pork Belly (approx. 300g)
- 200g Tteokbokki Rice Cakes
- 150g Vienna Sausages
Spicy & Sweet Sauce- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Minced Garlic
- 1 Tbsp Ketchup
- 1 Tbsp Ginger Syrup (or a small amount of minced ginger if unavailable)
- 1.5 Tbsp Jocheong (corn syrup/rice syrup, or maltose/corn syrup)
- Pinch of Black Pepper
- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Minced Garlic
- 1 Tbsp Ketchup
- 1 Tbsp Ginger Syrup (or a small amount of minced ginger if unavailable)
- 1.5 Tbsp Jocheong (corn syrup/rice syrup, or maltose/corn syrup)
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, let’s prepare the delicious sauce for your tteokkochi. In a bowl, combine 1.5 Tbsp of gochujang, 1 Tbsp of minced garlic, 1 Tbsp of ketchup, 1 Tbsp of ginger syrup (if you don’t have ginger syrup, use a small amount of finely minced fresh ginger; be careful not to use too much, as it can overpower the flavor), 1.5 Tbsp of jocheong (this adds a natural sweetness and glossy finish, so you won’t need extra sugar), and a pinch of black pepper. Stir everything together until well combined. This sauce is the key to the delightful sweet and spicy flavor!

Next, we’ll prepare the pork belly. Heat a pan over medium-high heat and add the pork belly strips. Sprinkle lightly with black pepper. Grill the pork belly until it’s nicely browned and slightly crispy. Since we’ll be coating it generously with sauce later, it’s best to avoid adding salt at this stage, as it could make the skewers too salty. Periodically drain off excess oil with paper towels as it cooks to keep it from being too greasy.
Step 3
Once the pork belly is cooked to your liking, cut it into pieces roughly the length of your rice cakes. Now it’s time to assemble the skewers! Thread the ingredients onto skewers in this order: pork belly, rice cake, and Vienna sausage. Repeat if your skewers are long enough. After assembling, generously brush the prepared spicy and sweet sauce all over the skewers, making sure to coat each piece evenly. Don’t be shy with the sauce – it’s what makes these skewers so irresistible!
Step 4
Finally, with the sauce generously applied, it’s time to grill them to perfection. Heat a non-stick pan over medium-low heat. Do not add any extra oil. Place the assembled skewers in the pan and cook slowly, turning them occasionally to prevent burning. It’s important to manage the heat so the sauce caramelizes beautifully without charring. As they cook and the sauce thickens, your delicious pork belly tteokkochi will be ready. Enjoy them immediately while they are hot and wonderfully gooey!
