Spicy & Sweet Gochujang Sauce

  • 2.5 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Sugar
  • 1 Tbsp Corn Syrup (or Oligosaccharide)
  • 2 Tbsp Minced Garlic
  • 3 Tbsp Sesame Oil
  • 1/2 tsp Black Pepper

Main Ingredients & Garnish

  • 150g Pork Neck
  • 1/3 Onion
  • 6 Lettuce Leaves
  • 1 serving Cooked Rice
  • 2 Tbsp Sesame Oil (for finishing)
  • 2 Tbsp Olive Oil (for cooking)

Cooking Instructions

Gently pat the pork neck dry with paper towels to remove excess blood. Then, cut it into bite-sized cubes, slightly smaller than usual. This helps the sauce marinate evenly and makes it easier to cook.

In a bowl, combine 2.5 Tbsp gochujang, 2 Tbsp gochugaru, 3 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp corn syrup, 2 Tbsp minced garlic, 3 Tbsp sesame oil, and 1/2 tsp black pepper. Whisk everything together until smooth to create the delicious sauce base.

Add the cubed pork neck to the bowl with the prepared sauce. Mix well, massaging the sauce into the meat. Let it marinate for about 10 minutes to allow the flavors to deepen.

Wash the 6 lettuce leaves thoroughly under running water and pat them dry. Shred them finely into thin strips. These will add a fresh, crisp contrast to the rich rice bowl.

Peel and thinly slice the 1/3 onion. Heat 2 Tbsp of olive oil in a pan over medium heat. Add the sliced onion and sauté until it becomes translucent and sweet, releasing its natural sugars.

Once the onions are softened, add the marinated pork neck to the pan. Cook over medium heat, stirring occasionally, until the pork is fully cooked through and the sauce has thickened and reduced slightly. Be careful not to burn the sauce.
