Spicy-Sweet Sausage and Shiitake Mushroom Stir-Fry
How to Make Delicious Sausage and Shiitake Mushroom Stir-Fry / Sausage Vegetable Stir-Fry / Perfect with Drinks
This dish is fantastic as a side for kids’ meals and also makes a superb appetizer with the addition of chili peppers. It offers a delightful balance of sweet and savory flavors that everyone will enjoy.
Main Ingredients- 110g Shiitake mushrooms
- 150g Vienna sausages
- 45g Carrot
- 30g Chili pepper(s) (e.g., Cheongyang chili pepper)
- 10g Minced garlic (approx. 1 Tbsp)
Sweet & Spicy Sauce- 2 Tbsp Soy sauce
- 2 Tbsp Sugar
- 4 Tbsp Ketchup
- 1.5 Tbsp Vinegar
- 1/2 tsp Minced garlic
- 3 Tbsp Canola oil
- 1 Tbsp Toasted sesame seeds
- A pinch of grated ginger (optional)
- 2 Tbsp Soy sauce
- 2 Tbsp Sugar
- 4 Tbsp Ketchup
- 1.5 Tbsp Vinegar
- 1/2 tsp Minced garlic
- 3 Tbsp Canola oil
- 1 Tbsp Toasted sesame seeds
- A pinch of grated ginger (optional)
Cooking Instructions
Step 1
Clean the shiitake mushrooms by rinsing them under running water with a little baking soda. Trim off the tough stems with scissors. Slice the mushroom caps into 4 to 6 pieces each.
Step 2
Score the Vienna sausages on both sides. Briefly blanch them in boiling water for about 30 seconds to remove excess oil and achieve a better texture. Drain them immediately and pat dry.
Step 3
Dice the carrot into neat, bite-sized squares. Thinly slice the garlic. Slice the chili pepper(s) diagonally to add a touch of heat. (If you prefer milder, use regular green bell peppers or a milder chili variety).
Step 4
Let’s make the delicious special sauce! In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp sugar, 4 Tbsp ketchup, 1.5 Tbsp vinegar, 1/2 tsp minced garlic, and a pinch of grated ginger for extra aroma. Whisk well. This sauce blend is a guaranteed hit!
Step 5
Heat 3 Tbsp of canola oil in a pan over medium heat. Add the sliced garlic and sauté gently until fragrant and golden brown, ensuring the garlic flavor infuses the oil without burning.
Step 6
Once the garlic is aromatic, add the prepared Vienna sausages and carrots to the pan. Stir-fry over medium heat until the sausages are lightly browned and the carrots are slightly tender.
Step 7
When the carrots are about two-thirds cooked, add the shiitake mushrooms and diagonally sliced chili peppers. Increase the heat to high and stir-fry everything quickly until well combined. Be careful not to overcook, as the mushrooms can become tough.
Step 8
Pour the prepared sauce evenly over all the ingredients in the pan. Stir-fry to coat everything beautifully. Once the sauce thickens slightly and glazes the ingredients, turn off the heat. Sprinkle with 1 Tbsp of toasted sesame seeds for a nutty finish.

Transfer the beautifully cooked sausage and shiitake mushroom stir-fry to a serving dish. This delightful dish is perfect for family meals or as an appetizer, and it’s also wonderful served over a bed of hot rice.
