Spicy & Sweet Savory Duck Bulgogi: Super Easy Recipe

Main Ingredients

  • Duck meat or roasted duck slices (1 pack, approx. 300-400g)
  • 1 medium onion
  • 1/2 stalk green onion
  • 5 Cheongyang chili peppers (adjust to your spice preference)

Cooking Instructions

Step 1

First, prepare the vegetables. Thinly slice the onion. Cut the green onion diagonally. Finely chop the Cheongyang chili peppers. Peel the whole garlic cloves.

Heat a pan over medium heat. Add the duck meat or roasted duck slices and pour in 3 Tbsp of cooking wine. Stir-fry, letting it simmer until the duck releases plenty of its juices and fat. If using roasted duck slices, they will render a good amount of fat, which helps create a stew-like consistency as it cooks. (I used roasted duck, and it released quite a bit of fat and juices.)

When the duck is about 70% cooked, add the sliced onion and whole garlic cloves to the pan. Continue to stir-fry until the onion becomes translucent and you can smell the aroma of the garlic.

Now, let’s make the sauce. Combine 3 Tbsp soy sauce, 2 Tbsp plum extract, 2 Tbsp oyster sauce, 2 Tbsp corn syrup, and 1 Tbsp sugar in a small bowl. Add 1/3 cup of water to the sauce mixture. Pour this sauce into the pan with the duck and vegetables. Stir well and let it simmer over medium heat until everything is nicely coated and bubbly.

Finally, add the 5 chopped Cheongyang chili peppers and stir-fry briefly. The chili peppers add a delicious spicy kick and depth of flavor. (I only used 5 initially, but we wanted it spicier, so we added a few more! The sauce is quite generous, so they don’t make it overwhelmingly hot – feel free to adjust the amount to your liking.)

Taste the bulgogi and add a pinch of salt if needed to adjust the seasoning. Once all the ingredients are well combined and coated in the delicious sauce, turn off the heat. Transfer the duck bulgogi to a serving dish and sprinkle with sesame seeds. Enjoy your homemade, flavorful duck bulgogi with a side of warm rice!
