Main Ingredients

  • 1.1kg pre-cleaned frozen crab (thawed before use)
  • 1/2 onion (thinly sliced)
  • 4 chili peppers (finely chopped, adjust to spice preference)
  • 4 cloves garlic (minced)

Seasoning Sauce

  • 2 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Mirin (rice wine)
  • 4 Tbsp Oligodang (corn syrup) or other sweetener
  • 1 tsp Maesilcheong (plum extract)
  • 2 Tbsp Kkanari Aekjeot (anchovy sauce, adjust to taste)
  • Chopped green onions, to taste
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Rinse the thawed frozen crabs thoroughly under running water. After washing, drain them well in a colander to prevent the sauce from becoming too watery.

Step 1

Step 2

Thinly slice the onion and finely chop the chili peppers (remove seeds if you prefer less heat). Mince the garlic.

Step 2

Step 3

In a bowl, combine gochujang, gochugaru, mirin, oligodang, maesilcheong, and kkanari aekjeot. Mix well to create the seasoning sauce. Use the anchovy sauce to adjust the saltiness; add a little more if needed to suit your taste.

Step 3

Step 4

Add the sliced onion, chopped chili peppers, minced garlic, and chopped green onions to the prepared seasoning sauce. Mix lightly.

Step 4

Step 5

Add the drained crabs to the bowl with the seasoning sauce.

Step 5

Step 6

Gently toss the crabs with the sauce, ensuring they are evenly coated. Be careful not to mix too vigorously, as this can break the crab meat.

Step 6

Step 7

Transfer the seasoned crab to an airtight container and let it marinate in the refrigerator for at least 3 days for a deeper flavor. Once marinated, serve beautifully in a dish. While it’s delicious immediately, marinating allows the flavors to meld, resulting in a richer taste.
