Spicy & Sweet Spam Gochujang Stir-Fry: The Ultimate Homemade Recipe

Main Ingredients

  • 1/2 Onion
  • 1/2 Green Onion (Scallion)
  • 200g Spam (about half a can)

Sauce Ingredients

  • 4 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Coarse Gochugaru (Korean chili flakes)
  • 1 Tbsp Sugar
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Oligodang (corn syrup or similar sweetener)
  • 0.5 Tbsp Minced Garlic

Cooking Instructions

Step 1

First, peel and thoroughly wash the onion. Dice it into small, cube shapes, about 0.7cm. If the pieces are too large, they might take longer to cook.

Wash the green onion and prepare to use both the white and green parts. Slice them thinly crosswise, about 0.5cm apart.

Take the Spam out of the can and measure out 200g. Cut it into cubes, roughly 1cm in size, following the shape of the can. Lightly pat the cut Spam with a paper towel to absorb any excess grease for a cleaner stir-fry.

In a small bowl, combine 4 Tbsp Gochujang, 1 Tbsp coarse Gochugaru, 1 Tbsp sugar, 1 Tbsp Mirin, 1 Tbsp Oligodang, and 0.5 Tbsp minced garlic. Mix them well with a spoon to create the sauce in advance. This helps the sauce blend smoothly and prevents clumping during cooking.

Heat 1-2 Tbsp cooking oil in a wide pan over high heat. Add the sliced green onion and onion. Stir-fry rapidly for about 1 minute until fragrant. Cooking over high heat helps to concentrate the flavors by evaporating the vegetables’ moisture.

Once the onion becomes slightly translucent and the green onion aroma is released, add the minced garlic (0.5 Tbsp) and immediately add the diced Spam. Continue to stir-fry over high heat for about 2 minutes until the Spam is lightly browned.

When the Spam is nicely browned, pour all the pre-made sauce into the pan. Keep the heat on high and stir-fry quickly to prevent the sauce from burning. Continue stirring until the sauce evenly coats the Spam and vegetables and has a glossy sheen. It’s ready to be served over rice as a donburi or as a delicious side dish!
