Main Ingredients- 200g Dried Shredded Squids (Baejimi Chae)
- 1/2 Tbsp Soju or Rice Wine
- 1 Tbsp Mayonnaise
Sauce Ingredients- 1 Tbsp Gochujang (Korean Chili Paste)
- 1 tsp Ginger Syrup
- 1 Tbsp Plum Extract
- 2 Tbsp Water

Cooking Instructions
Step 1
First, cut the dried shredded squids into bite-sized pieces. Cutting them into about 5-7cm lengths makes them easier to chew and helps the sauce to penetrate better.
Step 2
Sprinkle 1/2 tablespoon of soju (or rice wine) over the cut dried squids. Using a spray bottle can help distribute it evenly. Gently rub and knead with your hands to remove any fishy smell and to soften the squids. Let it sit for about 10 minutes to allow the marinade to soak in.
Step 3
After 10 minutes, add 1 tablespoon of mayonnaise to the marinated dried squids and mix well to coat them. This mayonnaise coating prevents the squids from becoming hard after stir-frying and helps maintain a moist and chewy texture, making them great for refrigeration.
Step 4
In a small pot or pan, combine 1 tablespoon of gochujang, 1 teaspoon of ginger syrup, 1 tablespoon of plum extract, and 2 tablespoons of water. Mix them well. Cook over medium-low heat until the sauce comes to a gentle boil. Stir occasionally to prevent burning.
Step 5
Once the sauce is boiling, briefly turn off the heat. Add the mayonnaise-coated dried squids. Quickly mix them with a spatula or spoon so that the squids are evenly coated with the sauce. Mixing rapidly, like a ‘shake shake’, prevents the squids from clumping and ensures the sauce adheres well.
Step 6
Now, turn the heat back on to low. Stir-fry for just about 1-2 minutes more, allowing the squids and sauce to meld together. Be careful not to overcook, as this can make them tough. Finally, drizzle with toasted sesame seeds and sesame oil to your liking for added nuttiness and aroma. Your delicious Gochujang-stir-fried dried shredded squids are ready!
