Main Ingredients

  • 1/4 head of well-fermented napa cabbage kimchi (approx. 300g)
  • 100g ground pork
  • 1/2 stalk of green onion

Seasoning & Other Ingredients

  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp gochugaru (Korean chili flakes)
  • 1/2 Tbsp sugar
  • 1 Tbsp minced garlic
  • A pinch of sesame seeds
  • A pinch of black pepper
  • 2 Tbsp canola oil or vegetable oil
  • 1 Tbsp mirin (rice wine)

Cooking Instructions

Step 1

First, thoroughly wash the green onion and slice it into bite-sized pieces, both the white and green parts. Heat 2 tablespoons of canola oil (or vegetable oil) in a pan over medium-low heat. Add the sliced green onions and gently sauté them to release their fragrance. This step infuses the oil with the sweet aroma of the green onions, enhancing the overall flavor of the kimchi stir-fry.

Step 1

Step 2

Once the green onions are fragrant, add the 100g of ground pork. To help eliminate any porky odor and ensure a tender texture, add 1 tablespoon of mirin (rice wine) at this stage.

Step 2

Step 3

Break apart the ground pork with chopsticks or a spatula to prevent clumping. Continue to stir-fry until the pork is no longer pink and has a crumbly texture. Cooking the pork thoroughly is essential for a delicious, odor-free dish.

Step 3

Step 4

Once the pork is cooked, add the kimchi (cut into bite-sized pieces) and all the prepared seasoning ingredients: 1/2 Tbsp soy sauce, 1/2 Tbsp gochugaru, 1/2 Tbsp sugar, 1 Tbsp minced garlic, and a pinch of black pepper. Stir-fry over high heat for a short time to ensure the seasonings are well distributed. If your kimchi is particularly sour, you might want to add a little extra sugar.

Step 4

Step 5

Continue to stir-fry for another 2-3 minutes, or until the kimchi is softened and well combined with the other ingredients. Finally, sprinkle in some sesame seeds for a nutty finish. Transfer the delicious stir-fried kimchi to a serving dish. Enjoy this ultimate rice companion, perfect with a bowl of hot, freshly cooked rice!
