Main Ingredients

  • 1 cup Universal Gochujang
  • 2 cups Pork Belly (approx. 400g)
  • 1/2 cup julienned Carrots
  • 1 cup chopped Green Onion (large pieces)
  • 2 cups chopped Onion (large pieces)

Cooking Instructions

Step 1

First, prepare all your ingredients. Julienne the carrots and chop the green onions and onions into large pieces of similar sizes so they cook evenly. Cut the pork belly into bite-sized pieces (about 2-3 cm). You’ll need 1 cup of universal gochujang, 1/2 cup of julienned carrots, 1 cup of roughly chopped green onions, 2 cups of roughly chopped onions, 1/3 cup of minced garlic, 1/3 cup of fine gochugaru, and 2 cups (about 400g) of bite-sized pork belly. Cutting the vegetables to similar sizes makes the dish look neater and ensures they cook at the same rate, which is very convenient.

Heat a pan over medium-high heat. Add the 2 cups of pork belly and stir-fry until it starts releasing its fat. Then, add 1 cup of universal gochujang and stir-fry, ensuring the gochujang coats the pork belly evenly. Start on medium-high heat, then reduce to medium once the gochujang is added, stirring constantly to prevent burning.

When the pork belly is about 80% cooked and slightly browned, add the julienned carrots and the large chopped onions. Continue to stir-fry together for about 2-3 minutes until the carrots and onions are slightly tender. If there’s too much oil in the pan at this point, you can drain some of it off.

Once the pork belly fat has mostly rendered and the vegetables are somewhat cooked, add 1/3 cup of minced garlic, the large chopped green onions, and 1/3 cup of fine gochugaru. Stir-fry well until all ingredients are thoroughly combined. The universal gochujang provides sufficient seasoning on its own, but feel free to adjust the amount of gochugaru to your preference for a spicier kick. For extra heat, adding a bit of Cheongyang chili pepper is also a great option.

Finally, just before turning off the heat, drizzle in a little sesame oil to enhance the aroma. Once you hear a gentle sizzle and smell the fragrant sesame oil, turn off the heat. Serve it hot over steamed rice! It’s also delicious served alongside some kimchi.
