Main Ingredients- 400g Pork Shoulder
- 3 King Oyster Mushrooms
- 1/2 Onion
- 2 Cheongyang Peppers (Korean chili peppers)
- 1 Green Onion
- 1 Tbsp Minced Garlic
- 100g Tteokbokki Rice Cakes
Special Jeyuk Bokkeum Sauce- 2.5 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Soy Sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Cheongju (Rice Wine)
- 1 Tbsp Maesil Cheong (Plum Syrup)
- 1/2 Tbsp Sugar
- 1/2 tsp Black Pepper
- 1 Tbsp Sesame Oil
- 2.5 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Soy Sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Cheongju (Rice Wine)
- 1 Tbsp Maesil Cheong (Plum Syrup)
- 1/2 Tbsp Sugar
- 1/2 tsp Black Pepper
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, prepare 3 king oyster mushrooms. Cut them in half lengthwise, then slice thinly about 0.5 cm thick. This ensures the sauce penetrates well for a delicious flavor.
Step 2
Now, heat a pan over medium-high heat. Add the 400g of pork shoulder and stir-fry until the surface is lightly browned. This step helps to remove any gamey odor from the pork.
Step 3
When the pork is almost cooked, add 1/2 sliced onion. Prepare the green onion by separating the white and green parts; thinly slice the white part diagonally and add it to the pan along with 1 tablespoon of minced garlic for a fragrant aroma. Stir-fry the aromatics and pork evenly.

Add the prepared king oyster mushrooms and stir-fry with the pork and onions until combined. It’s best to lightly stir-fry the mushrooms to retain their pleasant chewiness.

It’s time! For the sauce that defines the taste of Jeyuk Bokkeum, mix 2.5 Tbsp gochugaru, 4 Tbsp soy sauce, 1 Tbsp gochujang, 3 Tbsp cheongju, 1 Tbsp maesil cheong, 1/2 Tbsp sugar, 1/2 tsp black pepper, and 1 Tbsp sesame oil in a bowl. Pour the prepared sauce evenly into the pan.

Stir-fry everything together quickly to coat the ingredients evenly with the sauce. Be mindful of the heat to prevent the sauce from burning.
