Spicy & Sweet Stir-fried Pork with Kal-guksu
The Ultimate Combination: Stir-fried Pork and Kal-guksu
We’ve stir-fried kal-guksu noodles with spicy and sweet stir-fried pork! You can either rinse the noodles to remove excess flour and then stir-fry them with the pork, or lightly boil them before stir-frying. This recipe offers a delightful fusion of textures and flavors that you can easily recreate at home.
Main Ingredients- Pork (shoulder or front leg), 100-150g (cut into bite-sized pieces)
- Kal-guksu noodles, 1 serving (approx. 150-200g)
- Green onion, 1/2 stalk (sliced diagonally)
- Garlic, 4 cloves (sliced or minced)
- Onion, 1/2 (sliced into strips)
- King oyster mushroom, 1 (cut into bite-sized pieces)
- Cheongyang chili pepper, 1 (thinly sliced, optional)
Spicy & Sweet Pork Seasoning- Gochujang (Korean chili paste), 2 Tbsp
- Gochugaru (Korean chili flakes), 1 Tbsp
- Sugar, 1/2 Tbsp (or corn syrup)
- Soy sauce, 1.5 Tbsp
- Mirin (rice wine), 2 Tbsp
- Cheongju (or soju), 2 Tbsp
- Salt, a pinch (for adjusting seasoning)
- Black pepper, a pinch
- Gochujang (Korean chili paste), 2 Tbsp
- Gochugaru (Korean chili flakes), 1 Tbsp
- Sugar, 1/2 Tbsp (or corn syrup)
- Soy sauce, 1.5 Tbsp
- Mirin (rice wine), 2 Tbsp
- Cheongju (or soju), 2 Tbsp
- Salt, a pinch (for adjusting seasoning)
- Black pepper, a pinch
Cooking Instructions
Step 1
In a bowl, combine the gochujang (2 Tbsp), gochugaru (1 Tbsp), sugar (1/2 Tbsp), soy sauce (1.5 Tbsp), mirin (2 Tbsp), cheongju (2 Tbsp), a pinch of salt, and a pinch of black pepper. Mix well until the seasoning is evenly blended. Preparing the sauce in advance allows the flavors to meld beautifully.
Step 2
Cut the pork into bite-sized pieces. Slice the green onion diagonally, and mince or thinly slice the garlic. Cut the onion into strips and the king oyster mushroom into bite-sized pieces. If you prefer a spicier dish, thinly slice the Cheongyang chili pepper as well.
Step 3
Bring a pot of water to a boil and add the kal-guksu noodles. To achieve a chewy texture, drain the noodles in a colander and rinse off excess flour. (Optional: For a softer noodle texture, you can lightly boil them for 1-2 minutes before draining).
Step 4
Heat a lightly oiled pan over medium-high heat. Add the sliced pork and stir-fry until it’s browned on all sides. Then, add the sliced garlic and sauté until fragrant.
Step 5
Once the pork is partially cooked, add the prepared vegetables: onion, king oyster mushroom, green onion, and Cheongyang chili pepper (if using). Stir-fry quickly over high heat until the vegetables are slightly softened.
Step 6
Add the pre-made stir-fry sauce to the pan. Toss everything together to coat the ingredients evenly with the sauce. Reduce heat to medium and continue stir-frying, being careful not to burn the sauce.
Step 7
Add the prepared kal-guksu noodles to the pan. Gently toss and stir-fry until the noodles are well coated with the sauce and heated through. Ensure the noodles don’t clump together. Sprinkle with toasted sesame seeds for garnish to complete this delicious dish.
