Main Ingredients- 2 servings of somen noodles
- 1/4 onion, thinly sliced
- A small amount of carrot, thinly sliced
- 1/2 king oyster mushroom, sliced into bite-sized pieces
- 2-3 scallops, sliced into bite-sized pieces
- 1 squid, body cut into rings and tentacles cut into manageable pieces
- 5 perilla leaves, thinly sliced
Seasoning- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy sauce
- 1 Tbsp Maesilcheong (Korean plum extract)
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Sugar
- 0.5 Tbsp Minced garlic
- 0.3 Tbsp Sesame oil
- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy sauce
- 1 Tbsp Maesilcheong (Korean plum extract)
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Sugar
- 0.5 Tbsp Minced garlic
- 0.3 Tbsp Sesame oil
Cooking Instructions
Step 1
Heat 1 tablespoon of cooking oil in a heated pan. Add the sliced onions and stir-fry until translucent, allowing their aroma to develop. Add the minced garlic and cook for another 30 seconds until fragrant. Then, add the sliced carrots and stir-fry briefly.
Step 2
Add the prepared king oyster mushrooms, scallops, and cleaned squid to the pan. Stir-fry over high heat until the ingredients are cooked, ensuring they don’t release too much moisture.
Step 3
Once the squid and vegetables are partially cooked, add the pre-mixed seasoning (1.5 Tbsp Gochujang, 1 Tbsp Gochugaru, 1 Tbsp Soy sauce, 1 Tbsp Maesilcheong, 1 Tbsp Mirin, 1 Tbsp Sugar). Stir-fry quickly to coat all ingredients evenly with the sauce. Finish by drizzling in 0.3 Tbsp sesame oil for shine and then turn off the heat.
Step 4
Bring a generous amount of water to a boil in a large pot. Once boiling, add the somen noodles and gently separate them to prevent sticking. Cook until the noodles are al dente. Drain them under cold water and set aside in a colander.
Step 5
Transfer the finished spicy and sweet stir-fried squid and scallops to a serving plate, arranging it attractively. Top generously with the thinly sliced perilla leaves for a fresh garnish.
Step 6
Serve the drained somen noodles separately or place them alongside the stir-fried squid. This creates a wonderful wine pairing with the chewy noodles and spicy squid. Enjoy the rich and delightful flavors!
