Main Ingredients

  • 320g Sundae (Korean blood sausage; choose your favorite type, e.g., Chal Sundae or Byuncheon Sundae)
  • 1/2 Onion (thinly sliced)
  • 10 Perilla leaves (cut into bite-sized pieces)
  • 1/3 Carrot (thinly sliced into half-moons)
  • 2 Tbsp Minced green onion (for garnish)
  • 1 Tbsp Cooking oil

Spicy & Sweet Sauce

  • 2 Tbsp Gochugaru (Korean chili flakes; adjust to your spice preference)
  • 1 Tbsp Gochujang (Korean chili paste; adds depth and umami)
  • 1 Tbsp Soy sauce (for savory flavor)
  • 1 Tbsp Sugar (adjust to taste; balances the spiciness)
  • 1 Tbsp Minced garlic (enhances aroma)
  • 1 Tbsp Cheongju (rice wine; helps remove any gamey odor from sundae)
  • 2 Tbsp Water (to adjust sauce consistency)

Cooking Instructions

Step 1

First, prepare the vegetables. Slice the carrot thinly into half-moons and thinly slice the onion. Cut the perilla leaves into bite-sized pieces. Set them aside as they will be added towards the end to maintain their fresh aroma and crispness.

Step 1

Step 2

Heat the cooking oil in a pan over medium heat. Add the prepared carrots and onions and stir-fry for about 2 minutes until the carrots become slightly translucent and the onions soften, bringing out their natural sweetness.

Step 2

Step 3

Once the vegetables are about half-cooked, add the sundae (or innards), cut into bite-sized pieces, to the pan. Stir-fry them together, ensuring the sundae doesn’t stick. Continue to cook until the sundae is heated through.

Step 3

Step 4

Now it’s time to add the sauce that will make the sundae so delicious! Add all the sauce ingredients: gochugaru, gochujang, soy sauce, sugar, minced garlic, cheongju, and water directly over the sundae and vegetables. Stir-fry over high heat to quickly coat the sundae evenly with the sauce.

Step 4

Step 5

As the sauce thickens and coats the sundae with a glossy sheen, add the pre-cut perilla leaves. Stir-fry briefly for about 30 seconds. It’s important not to overcook them, so they retain their crisp texture and fragrant aroma.

Step 5

Step 6

Finally, sprinkle in the perilla seed powder for an added nutty flavor and aroma, and mix gently. This step truly elevates the dish! Transfer the stir-fried sundae to a serving plate and garnish with the minced green onions for a visually appealing and flavorful finish. Enjoy your delicious Sundae Bokkeum!
