The perfect dish for when you have a low appetite! Try making this simple Bibim Guksu at home, with its mouth-watering red sauce and chewy noodles. It’s a fantastic combination of chewy noodles and crisp kimchi. This recipe is so easy, even beginners can succeed!
Main Ingredients
- Kimchi (well-fermented) about 1/4 head
- Somen or medium noodles, 1 serving
- 1 Boiled egg (optional)
- 1/4 Cucumber, julienned
Special Bibim Sauce
- 1/2 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Sugar (adjust to taste)
- 2/3 Tbsp Soy sauce
- 1/2 Tbsp Vinegar (adjust to taste)
- 1 Tbsp Sesame seeds (whole or crushed)
- A little Sesame oil (for nutty aroma)
- 1/2 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Sugar (adjust to taste)
- 2/3 Tbsp Soy sauce
- 1/2 Tbsp Vinegar (adjust to taste)
- 1 Tbsp Sesame seeds (whole or crushed)
- A little Sesame oil (for nutty aroma)
Cooking Instructions
Step 1
First, let’s make the key component of delicious Bibim Guksu: the sauce. For one serving, combine 1/2 Tbsp Gochugaru, 1 Tbsp Gochujang, 1/2 Tbsp Sugar, 2/3 Tbsp Soy Sauce, and 1/2 Tbsp Vinegar in a bowl. Mix well. Finally, add 1 Tbsp of sesame seeds and a little sesame oil for a nutty fragrance. Your delicious sauce is ready! (Feel free to adjust sugar and vinegar to your preference.)
Step 2
Rinse the kimchi, drain it well, and finely chop it into small pieces, about 0.5cm thick. Using scissors is much easier and quicker than using a knife, and it also means less washing up! The chopped kimchi will be mixed with the sauce you just made.
Step 3
Bring a generous amount of water to a rolling boil in a large pot. Once boiling, add the somen noodles and cook them. Using a wide frying pan instead of a regular pot can help prevent the water from boiling over. If the water starts to boil over, add a little cold water to calm it down. (Somen noodles usually take about 3-4 minutes to cook.)
Step 4
Drain the cooked noodles in a colander. To make them nice and chewy, rinse them immediately under cold running water several times. Rinsing with cold water removes excess starch and adds elasticity, resulting in a delightfully springy texture. Make sure to drain the noodles thoroughly after rinsing.
Step 5
In the bowl with your prepared sauce, add the drained noodles and the finely chopped kimchi. You can adjust the amount of kimchi to your liking. You can also add the julienned cucumber at this stage if you like. Get ready to mix all the ingredients together harmoniously.
Step 6
Now it’s time to mix everything together into a delicious dish! Gently mix the sauce, kimchi, and noodles together using your hands or chopsticks until everything is evenly coated. Be careful not to mix too vigorously, as this can break the noodles. Transfer the well-mixed Bibim Guksu to a nice serving bowl. Garnish with a boiled egg, shredded seaweed, or extra sesame seeds for an even more delightful presentation!
