- 1/2 Onion (approx. 50g)
- 1/2 Carrot (approx. 30g)
- 1/2 Cucumber (approx. 50g)
- 1/2 Apple (approx. 50g)
Spicy, Tangy, and Sweet Dressing
- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Vinegar
- 2 Tbsp Sugar
- 1 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Vinegar
- 2 Tbsp Sugar
- 1 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare the purslane. Gently rinse the purslane under cool running water 3 to 4 times to thoroughly remove any dirt or debris. Drain it well in a colander.
Step 2
Next, let’s prepare the vegetables and fruit. Slice the cucumber and carrot diagonally into bite-sized pieces. Thinly slice the onion into strips – this will help mellow its sharpness slightly. Peel and core the apple, then slice it into attractive half-moon shapes for a touch of sweetness and crisp texture.
Step 3
Now, it’s time to bring everything together and mix! In a large bowl, combine the well-rinsed purslane with the prepared carrots, cucumber, onion, and apple. Add the pre-mixed dressing ingredients and gently toss everything together until well combined. Be careful not to overmix, as this can make the purslane mushy. Your delicious and appetite-whetting Dolnamul Muchim is now ready! You can enjoy it immediately, or for an extra refreshing treat, chill it in the refrigerator for a bit before serving.
