Bibim Buckwheat Noodles Ingredients- A small amount of shredded cabbage (for crispiness)
- A small amount of shredded red cabbage (adds vibrant color)
- 1 cucumber, thinly julienned (for a cool, crisp bite)
- 1 carrot, thinly julienned (adds sweetness and crunch)
- 3 servings of buckwheat noodles
- A small amount of crown daisy (optional, for aroma)
- 1 pack of salad spinach (adds freshness)
- 3 hard-boiled eggs, quartered (for protein and substance)
- A small amount of radish sprouts (for garnish and a peppery finish)
- A generous amount of prepared Bibim sauce
Bibim Sauce Ingredients- 1 Tbsp chili powder (gochugaru, for spice)
- 1 tsp minced garlic
- 1 Tbsp plum extract (maesilcheong, for sweetness and tang)
- 1.5 Tbsp corn syrup or oligosaccharide (for gloss and sweetness)
- 3 Tbsp red pepper paste (gochujang, for depth of flavor)
- 4 Tbsp apple vinegar (for a bright, tangy finish)
- 1 tsp sesame oil (for nutty aroma)
- A pinch of toasted sesame seeds (for garnish)

Cooking Instructions
Step 1
First, let’s prepare the delicious Bibim sauce. In a bowl, combine chili powder, minced garlic, plum extract, corn syrup, gochujang, and apple vinegar. Mix thoroughly until well combined. Finally, stir in the sesame oil and toasted sesame seeds for a rich aroma. Your Bibim sauce is now ready!

Step 2
To prepare the hard-boiled eggs, gently place them in a pot and cover with water. Bring to a boil, then add a pinch of salt and a splash of vinegar to the water. Cook for 15 minutes for fully hard-boiled eggs. Once cooked, immediately transfer them to an ice bath to cool down. After cooling, peel and cut each egg into four wedges.

Step 3
Wash the cabbage thoroughly, remove the core, and shred it very thinly using a mandoline slicer or a knife. Soak the shredded cabbage in cold water for a few minutes to enhance its crispiness. Drain well and squeeze out excess water before use.

Similarly, wash the red cabbage, remove the core, and shred it thinly. The vibrant red cabbage not only adds beautiful color but also benefits from a quick soak in cold water to make it extra crisp. Drain well.

Wash the cucumber, trim off the ends, and slice it thinly into julienne strips. You can remove the seedy core if you prefer a less watery texture. The fresh, crisp cucumber will add a wonderful refreshing element.

Wash the carrot, peel it, and then julienne it into thin strips, similar to the cucumber. The bright orange color of the carrot will make your dish visually appealing and add a subtle sweetness.
