Main Ingredients
- 2 cucumbers
- 1/2 onion
Spicy & Sweet Seasoning
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Maesilcheong (Korean plum syrup)
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 1 Tbsp Sugar
- 3 Tbsp Lemon Juice
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Chopped Scallions
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Maesilcheong (Korean plum syrup)
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 1 Tbsp Sugar
- 3 Tbsp Lemon Juice
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Chopped Scallions
Cooking Instructions
Step 1
Wash the cucumbers thoroughly under running water. Trim off both ends and taste a small piece to check for any bitterness. Gently rub the skin if needed.
Step 2
Cut the prepared cucumbers into approximately 5cm (2-inch) lengths. Then, slice each piece into quarters lengthwise. Aim for pieces that are not too thin to maintain a crisp texture.
Step 3
Peel the onion, wash it, and slice it into approximately 1cm (1/2-inch) thick pieces. Slicing the onion to a similar thickness as the cucumber will create a harmonious texture.
Step 4
In a mixing bowl, combine all the seasoning ingredients: 2 Tbsp Gochujang, 1 Tbsp Gochugaru, 2 Tbsp Maesilcheong, 1 Tbsp Fish Sauce, 1 Tbsp Sugar, 3 Tbsp Lemon Juice, 1 Tbsp Sesame Oil, 1 Tbsp Toasted Sesame Seeds, 1/2 Tbsp Minced Garlic, and 1 Tbsp Chopped Scallions. Whisk them together until well combined and smooth.
Step 5
Add the prepared cucumbers and onions to the bowl with the seasoning. Gently toss and mix everything together using your hands. Ensure the seasoning coats the vegetables evenly without over-mashing, which can make the cucumbers mushy.
Step 6
Your spicy, tangy, and sweet Gochujang Cucumber Salad is ready! It’s delicious served over a bowl of warm rice or as a side with fresh greens. For the best crispness and flavor, it’s highly recommended to enjoy it immediately after preparing!
