Our Family’s Special Kimchi Bibim Guksu Recipe
Introducing our beloved Kimchi Bibim Guksu, a favorite on our dining table for ages. The refreshing tang of kimchi combined with the crispiness of cucumber creates a delightful dish perfect for when you lack appetite. Noodles & Main Ingredients- Somyeon (thin wheat noodles) (2 servings) 200g
- Kimchi (well-fermented) 3 handfuls
- Cucumber 1
- Scallions (chopped) 1 Tbsp
Dressing- Soy Sauce 3 Tbsp
- Vegetable Oil 1 Tbsp (can substitute sesame oil)
- Plum Extract 1 Tbsp
- Sugar 2 Tbsp (adjust to taste)
- Red Pepper Flakes (Gochugaru) 2 Tbsp
- Sesame Oil 1 Tbsp
- Toasted Sesame Seeds 1/2 Tbsp
- Soy Sauce 3 Tbsp
- Vegetable Oil 1 Tbsp (can substitute sesame oil)
- Plum Extract 1 Tbsp
- Sugar 2 Tbsp (adjust to taste)
- Red Pepper Flakes (Gochugaru) 2 Tbsp
- Sesame Oil 1 Tbsp
- Toasted Sesame Seeds 1/2 Tbsp
Cooking Instructions
Step 1
Boil 4-5 cups of water in a pot. While the water is heating up, prepare the ingredients for the delicious bibim guksu dressing.
Step 2
Prepare about 200g of somyeon noodles, which is suitable for 2 servings. Approximately 100g per person is standard.
Step 3
Chop the kimchi into bite-sized pieces. If the pieces are too large, it might be difficult to mix well.
Step 4
Wash the cucumber, cut it in half lengthwise, and then slice it thinly into strips. This will add a refreshing crunch.
Step 5
In a mixing bowl, combine the chopped kimchi (3 handfuls), sliced cucumber, and 1 Tbsp of chopped scallions.
Step 6
Add 1 Tbsp of vegetable oil to the bowl to give the kimchi and cucumber a nice sheen. (Sesame oil can also be used here.)
Step 7
Add 3 Tbsp of soy sauce for a savory depth of flavor.
Step 8
Stir in 1 Tbsp of plum extract to balance the sweet and sour notes.
Step 9
Add 2 Tbsp of sugar to adjust the sweetness. You can modify this amount based on the kimchi’s saltiness and your personal preference.

Incorporate 2 Tbsp of gochugaru (red pepper flakes) for a pleasant spiciness. Finish by adding 1 Tbsp of sesame oil and 1/2 Tbsp of toasted sesame seeds for a nutty aroma. Mix all the dressing ingredients thoroughly.
Step 11
Once the water is boiling vigorously, add the prepared somyeon noodles and cook. They typically take about 3-4 minutes to cook perfectly.
Step 12
Here’s a tip to check if the noodles are done: Lift a strand with chopsticks. If it looks glossy and smooth, it’s cooked. If you see any white, thread-like lines, they need a bit more cooking time.
Step 13
Immediately rinse the cooked noodles under cold running water. Using ice-cold water will make the noodles extra firm and chewy. Rinse them thoroughly, rubbing gently, until the water runs clear.
Step 14
Drain the noodles completely in a colander. Ensuring the noodles are well-drained is crucial for the dressing to adhere properly.
Step 15
Add the drained noodles to the prepared dressing and mix everything together well. Gently toss the noodles with the dressing to ensure every strand is coated. Feel free to adjust the sugar or gochugaru to your liking for more sweetness or spice.
Step 16
