Tofu Squid Duruchigi (Spicy Stir-fry)

Main Ingredients
- 1 whole Squid (fresh, cleaned and cut into bite-sized pieces)
- 1 Onion (medium-sized, cut into thick slices)
- 1 Zucchini (sliced into half-moons)
- 1 Tbsp Minced Garlic
- 1 Green Onion (sliced diagonally)
- 1 Green Chili Pepper and 1 Red Chili Pepper (sliced diagonally for color)
Broth Ingredients
- 4 cups Anchovy Broth (or a basic vegetable broth for depth of flavor)
- 2 Tbsp Perilla Seed Powder (for a nutty, rich taste)
- 1 Tbsp Cheongju (Rice Wine) (to remove any fishy odor)
- A pinch of Salted Shrimp (for final seasoning)
Seasoning Paste
- 3 Tbsp Gochujang (Korean Chili Paste)
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 0.7 Tbsp Minced Garlic
- 2 Tbsp Maesil Cheong (Plum Extract)
- 4 cups Anchovy Broth (or a basic vegetable broth for depth of flavor)
- 2 Tbsp Perilla Seed Powder (for a nutty, rich taste)
- 1 Tbsp Cheongju (Rice Wine) (to remove any fishy odor)
- A pinch of Salted Shrimp (for final seasoning)
Seasoning Paste
- 3 Tbsp Gochujang (Korean Chili Paste)
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 0.7 Tbsp Minced Garlic
- 2 Tbsp Maesil Cheong (Plum Extract)
Cooking Instructions
Step 1
First, prepare the squid. Clean it by removing the ink sac and beak, then peel off the skin if desired. Cut the squid into bite-sized pieces. In a bowl, combine the squid with the seasoning paste (Gochujang 3 Tbsp, Gochugaru 1 Tbsp, Minced Garlic 0.7 Tbsp, Maesil Cheong 2 Tbsp). Mix well to coat the squid. Add the thickly sliced onion to the bowl and let it marinate together with the squid for about 10-15 minutes. This marination step helps the flavors meld beautifully.
Step 2
Prepare the vegetables. Slice the zucchini into half-moons and cut the tofu into bite-sized cubes. In a pot, add the sliced zucchini, tofu cubes, and 1 Tbsp of minced garlic. Pour in the anchovy broth (4 cups). Bring to a gentle boil over medium heat until the zucchini and tofu are slightly softened.
Step 3
Once the broth is simmering, add the marinated squid and onions into the pot. Increase the heat to high and cook quickly. It’s important not to overcook the squid, as it can become tough. Cook just until the squid is opaque and cooked through.
Step 4
Taste the broth and adjust the seasoning. If needed, add a pinch of salted shrimp for extra depth of flavor. Stir in 1 Tbsp of Cheongju (rice wine) to help eliminate any fishy odors from the squid. Finally, add the perilla seed powder (2 Tbsp) and simmer gently for another minute or two to allow the flavors to combine and thicken the sauce slightly.
Step 5
Just before serving, add the diagonally sliced green onion and chili peppers. Stir them in and cook for another minute until they are slightly tender but still vibrant. These add a fresh aroma and beautiful color to the dish.
Step 6
