Ingredients- 200g Tofu Noodles
- 150g Canned Tuna (drained)
- 250g Tomato Puree
- 2 Anchovy fillets (optional, for added depth of flavor)
- 1/4 Onion
- 3-4 cloves Garlic
- 2 tsp Crushed Chili Flakes (adjust to your spice preference)
- 1 tsp Dried Oregano
- Pinch of Salt
- Pinch of Black Pepper
- Olive Oil
- Fresh Parsley or Chervil (for garnish)
Cooking Instructions
Step 1
First, prepare the aromatics and vegetables. Finely dice 1/4 of an onion into small, approximately 0.5cm cubes. Cutting them small ensures they cook through evenly and quickly.
Step 2
Thinly slice 3-4 cloves of garlic. Slicing the garlic thinly will allow its flavor to infuse beautifully into the olive oil as it sautés.
Step 3
Finely mince the 2 anchovy fillets. While optional, adding anchovies will contribute a wonderful savory depth (umami) to the sauce.
Step 4
Drain the oil from the 150g can of tuna thoroughly. Removing excess oil prevents the pasta sauce from becoming greasy.
Step 5
Drain the oil from the 150g can of tuna thoroughly. Removing excess oil prevents the pasta sauce from becoming greasy.
Step 6
Now, let’s start building the pasta sauce. Heat a pan over medium-low heat and add a generous amount of olive oil. Add the sliced garlic, diced onion, and crushed chili flakes. Sauté gently, stirring occasionally, until the garlic is fragrant and the onions become translucent and soft. Be careful not to burn the garlic.
Step 7
Once the garlic and onions have softened and become translucent, add the minced anchovies and the drained tuna to the pan. Stir and cook for another minute or two, allowing the anchovies to break down and meld with the tuna and aromatics.
Step 8
Once the garlic and onions have softened and become translucent, add the minced anchovies and the drained tuna to the pan. Stir and cook for another minute or two, allowing the anchovies to break down and meld with the tuna and aromatics.
Step 9
Pour in the 250g of tomato puree and add 1 teaspoon of dried oregano. Stir everything together well. The oregano will add a lovely herbaceous note that complements the tomato base.
Step 10
Add the 200g of tofu noodles to the pan. Gently toss them with the sauce, ensuring they are evenly coated. Be careful not to break the delicate tofu noodles.
Step 11
Continue to cook for another 1-2 minutes, allowing the tofu noodles to absorb the flavors of the sauce. Taste the pasta and season with salt and freshly ground black pepper as needed. Adjust the seasoning carefully to avoid over-salting.
Step 12
Serve the spicy tomato tuna pasta immediately. For an extra touch of freshness and visual appeal, garnish with chopped fresh parsley or chervil. Enjoy this flavorful, healthy, and satisfying meal!
