Spicy Tuna and Potato Gochujang Stew

Ingredients- 500ml Water (or anchovy broth/rice water for deeper flavor)
- 150g Canned Tuna (drained)
- 3 Medium Potatoes
- 1/2 Onion
- 1 Green Onion
- 2 Chili Peppers (e.g., Korean green or red peppers)
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Guk-ganjang (Korean soup soy sauce)
- 1 Tbsp Tuna Extract (or fish sauce/soy sauce)
Cooking Instructions
Step 1
First, prepare the ingredients for the stew. Thinly slice the onion into strips. Peel the potatoes and slice them thinly, about 0.5cm thick. Slice the green onion and chili peppers diagonally or into bite-sized pieces. (Tip: For an extra spicy kick, use Cheongyang chili peppers.)
Step 2
Drain the oil from the canned tuna, but reserve the oil. Add the reserved tuna oil to a pot and heat over medium heat. Add the thinly sliced potatoes and sauté for 2-3 minutes until they start to look slightly translucent.

Pour 500ml of water into the pot with the sautéed potatoes. (Tip: Using anchovy broth or rice water instead of plain water will add a richer depth of flavor!) Bring to a boil over high heat, then reduce to medium-low heat and cook until the potatoes are almost tender.

When the potatoes are almost fully cooked, add the seasoning ingredients to the pot and stir well to dissolve. Mix in 2 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp guk-ganjang, and 1 Tbsp tuna extract. Adding the seasonings when the potatoes are nearly done helps to create a cleaner broth.

Let the stew simmer for another 2-3 minutes to allow the flavors to meld and the potatoes to finish cooking. Then, add the sliced onions and continue to simmer.

Next, add the sliced chili peppers. Their subtle heat will infuse the broth, enhancing the overall flavor.

Finally, add the prepared canned tuna. Be careful not to stir too vigorously at this stage, as it can cause the tuna to break apart. Simmer gently for a short while after adding the tuna.

Once the broth has thickened slightly and all the ingredients are well combined, add the sliced green onions. Simmer for about 1 more minute to allow their fresh aroma to infuse into the stew. Turn off the heat.
